This fragrant rice with mushrooms and chestnut sesame oil is nutritious, tasty and easy to prepare. It’s a vegan-friendly one-pot meal that’s conveniently prepared in a rice cooker.
Ingredients:

1 tbsp sesame oil + 1 tbsp cooking oil
1 thumb-sized ginger
6 pieces of dried shiitake mushrooms, soaked and kept in water
1 pack Shimeji Mushroom
100 g roasted chestnuts
1 cup of rice
1 & 1/4 cup water/the reserved mushroom water
2 tbsp oyster sauce
1 tbsp mirin/rice wine
1 tbsp light soy sauce
1/2 tsp dark soy sauce
Optional: some spring onion and red chili for garnish

Method:
1. Heat the cooking oil and sesame oil, fry the ginger aromatically, stir-fry the mushrooms, season with a pinch of salt and pepper.
2. Add all the ingredients in the rice cooker. Please make a choiche
3. When cooking is complete, garnish with scallions and chili, if using. Serve warm.
Optional: Drizzle 1 tsp sesame oil for extra flavor!
