Have BROOKIES for days with these muffin tin cookie brownies, aka BROOKIES!
Every now and then I stop by Trader Joe’s to buy some goodies for me or the boys. (If you haven’t tried their Caramelized Onion Cheddar Cheese yet…RUN AND GET IT.)
They have “Brookies” that are absolutely delicious and I have to resist the urge to grab a box because I know I’d almost eat the whole thing on the way home. (Just to keep it real here!)
I recently grabbed some boxes for an end of season sports meet and WHEW. I knew the boys would gobble them up and I was in a hurry and forgot to prepare a treat… so I ended up shelling out a little more than I wanted… even for this special occasion.
It made me think…these can’t be hard to make.
It’s cookie dough and brownie batter. And to get the best consistency, the smaller the “container” the better…
So…
I introduce you…
MUFFIN SHEET BROOKIES.
tbh… I prefer the bite sized/reachable smaller mini muffin tin version. But really, it’s cookies and brownies together… it’s delicious whichever pan you use!!! lol

How to make muffin pan brookies
A magical combination of cookie dough and brownie batter – baked to perfection in a muffin pan!
Ingredients
- 1 Crate brownie Mix
- water, oil and eggs as indicated on the brownie box
- 2 16.5 oz Chocolate Chip Cookie Rolls

Preheat oven to 375 F. Lightly spray 2 muffin tins with nonstick cooking spray.

Mix the brownie batter with the water, oil, and eggs as directed on the package.

Cut both cookie dough rolls into 12 slices. Press this into the bottom of the wells in the muffin pan.

Press the 24 sheets of cookie dough into the wells of the muffin tin. Press to “seal” the bottom of the well to prevent the brownie batter from slipping under the cookie dough.

Using an ice cream scoop, scoop and distribute evenly among the 24 muffin tins.

Bake in the preheated oven for 20 to 22 minutes. Allow to cool for at least 10 minutes before removing the Brookie Bites from the muffin tins with a knife. Enjoy!
