This Mixed Berry Baked Oatmeal recipe is super easy to make and a wonderful way to enjoy oatmeal. You can use whatever berries you like and this makes a great brunch recipe. We made this with strawberries and blueberries and it turned out wonderful! We love the combination of almond flavor with berries!
Ingredients needed for Mixed Berry Baked Oats:
Strawberries and blueberries (or berries of your choice)
Old fashioned oatmeal
Cinammon
Brown sugar
milk or condensed milk
egg
Honey
almond extract
slivers of almonds
As you can see, these are very simple ingredients and this dish is quick to put together. It’s super versatile and a dish that’s great to reheat. I think this is a great dish to make on a Sunday and then enjoy for a few busy mornings. We topped it with whipped cream, but you can omit that!
You could also just use vanilla extract instead of almonds, we simply enjoy almonds in this dish. If you’re using vanilla, you might want to garnish with pecans as it’s a wonderful combination. We also used condensed milk here, but you could easily use 2% or whole milk.
We served this in cute little teacups and everyone loved it! It was great for brunch and easy to serve that way.

Mixed Berry Oatmeal Casserole
This easy Berry Oatmeal Casserole is quickly becoming a favorite!
Servings: 6 portions
- 2.5 cups of berries We used strawberries and blueberries
- 1 Cup of old-fashioned oatmeal
- 1 teaspoon with cinnamon
- 1/3 Cup from brown sugar
- 1 Cup from milk We used condensed milk
- 1 egg beaten
- 1 tablespoon of honey
- 1 teaspoon from almond extract
- 1/2 Cup from ground almonds

Preheat oven to 350 degrees. Spray a 9 inch deep pie plate with cooking spray.

Add 2 cups of the berries to the dish, in a separate bowl mix together oatmeal, cinnamon and brown sugar. Mix and spread over the berries.

In another bowl add egg, milk, honey and almond extract. Mix with a spoon and pour over the berries, shaking the plate to evenly coat the oatmeal mixture.

Garnish with the remaining fruit and slivers of almonds.

Bake for 40-45 minutes or until the oats are golden brown. Top with whipped cream for a real treat!
