It’s a busy week, so we’re making it extra easy by planning in for all our dinners, some breakfasts, a bit for dessert, and some leftovers for lunch! Here we go!
Sunday – Arugula Pesto Pasta with Shrimp! It’s still my favorite and there’s no end in sight.

Monday – Chicken and parmesan meatballs please! Add a broccolini side dish too!

Tuesday – Grilled salmon skewers with basil vinaigrette because summer is coming!

Wednesday – Shredded Mexican Chicken Tacos with Guacamole, Bean Dip, and Queso! This chicken recipe couldn’t be simpler!

Thursday – Chipotle Chicken Salad Wraps!! My favorite when it comes to taste!

Friday – Grilled Fish + Cauliflower Rice Bowls!

and for a trifle sweet to get you through the week, THESE Coconut Chocolate Chip Cookies

And for breakfast…I make a broccolini quiche that I can pop in the microwave or on the stovetop and reheat before my trip every morning!
