Last week I was in overdrive in the kitchen making healthy salads. This delicious Mediterranean quinoa salad is just one of them My current achievements. It combines all of my favorite flavors and is filling and very nutritious.

I know a lot of people who don’t like quinoa. I personally love this miracle grain and eat it quite often. My favorite way to enjoy it is by adding it to a salad. I recently did that Greek salad with quinoa and it turned out very tasty too. This Mediterranean Quinoa Salad I’m sharing with you today is made with simple ingredients and tastes amazing. Even if you’re one of those people who doesn’t like quinoa, you’ll probably still enjoy this salad. Try it.

I recommend using a good quality feta cheese as it makes a huge difference. Try to find the variety sold in blocks and stored in brine. I buy feta cheese from a local Bulgarian store, but you can also find it in big health food stores or order feta cheese from Amazon

How to prepare this Mediterranean Quinoa Salad

1. Start by cooking the quinoa in lightly salted water for 15-20 minutes until tender. Place the quinoa on a plate and let cool.

2. While the quinoa is cooling, prepare the dressing by whisking together all of the dressing ingredients.

Ingredients

For the salad

  • ¼ Cup uncooked quinoa
  • ½ Cup black olives, sliced
  • ½ Cup roasted peppers, sliced
  • ½ Cup fresh or canned corn kernels
  • ¼ Cup red onion, diced
  • ¼ Cup coriander, chopped
  • Cup Feta Cheese Crumble

For the dressing

  • 1 tablespoon olive oil
  • 1 tsp red wine vinegar
  • ½ tsp dried oregano
  • salt pepper

instructions

  • Start by cooking the quinoa in lightly salted water according to package directions (15-20 minutes). After cooking, drain and let cool.

  • Prepare the dressing by mixing all the ingredients together.
