For the potatoes
- 2 tablespoon (30 g) vegetable oil
- 1 lb (450 g) red potatoes to dice
- 1 large (400 g) sweet potato to dice
- Salt
- freshly ground black pepper
- 1/4 Cup (60 mL) water
For the meat
- 1 (5 oz- 150 g) medium onion rolled
- 3 Garlic cloves
- 1 â…“ lb (600 g) lean ground beef and pork
- 1 tablespoon (7g) smoked paprika
- 1 tsp (3g) Chili Powder
- 2 tsp (7g) ground cumin
- 1 tablespoon (3g) Thyme
- 1 tsp (5g) salt
- 1/3 Cup (70 g) tomato paste
For topping
- 1 Cup (100 g) cheddar cheese
- fresh herbs

Prepare the potatoes.

In a 9-10 inch (23-25) skillet, heat the oil over medium-high heat. Add the diced potatoes to the pan and fry for 2-3 minutes, stirring constantly. Add some salt, pepper and water.

Cover and simmer until the water has evaporated. Remove the lid and continue to cook, stirring constantly, until the potatoes are tender. Place the potatoes in a medium-sized bowl.
Prepare the meat filling.

In the same pan, add about 1 tbsp oil, add the onion and cook until tender, 5 minutes. Add garlic and cook for 1 minute more.

Add the ground beef and cook about 10-12 minutes or until the meat is tender. Crumble the meat as it cooks.

Add the paprika powder, cumin, chilli powder, thyme, salt and pepper. Stir to combine. Add tomato paste and stir again to combine.

Return the potatoes to the pan and stir to combine with the cooked meat.

Spread the grated cheese on top. Place in the oven and grill for 3-4 minutes until cheese is melted.
