Vegan Mousse Ingredients

  • Ripe, fresh California avocados. You’ll want ripe avocados for this recipe, soft to the touch so your food processor will do an excellent job blending them smooth.
  • Vegan White Chocolate. Use any dairy-free variety of white chocolate. I really love Enjoy Life’s vegan white chocolate and Evolve carries low sugar, dairy free white chocolate too!
  • Matcha powder. Choose official grade matcha for the best color, taste and nutrition.

You can add some additional ingredients:

  • Vanilla Bean Pasta. or vanilla extract. It just adds extra warmth and depth to the dessert but isn’t necessary.
  • Maple syrup. As needed. It will depend on your palate and the type of vegan white chocolate you use. Taste and adjust as you go.
  • Fresh mint. For the garnish.

How to Make Matcha White Chocolate Mousse

Pit and Peel Avocados

Remove the seed and carefully peel the avocado skin. Add half of avocado to food processor.

Melt the vegan white chocolate

Using either a microwave or double boiler/bain marie method, melt your white chocolate until pourable.

Blend Mousse Ingredients

Add the white chocolate to the food processor and then sift in your matcha powder. Blend until completely smooth and creamy and adjust to taste. Dust with a thin layer of matcha powder if desired and serve immediately.

Tips and FAQ

Avocados are ripe

I recommend using avocados that are ripe to the touch. They should be soft enough to blend smoothly and will also give a creamy result for this dish!

Component replacement

If you prefer dark chocolate or milk chocolate instead of white chocolate, you can absolutely substitute. Just be aware that the green color probably won’t shine through. You may need to adjust for sweetness as white chocolate tends to be much sweeter than dark or milk chocolate.

Serving suggestions

This dessert is best enjoyed immediately so I recommend preparing just before serving. If desired, you can refrigerate the mouse for about 30 minutes or longer. Matcha powder will help preserve the beautiful green avocado color. If preparing ahead or chilling, dust with matcha powder just before serving for best presentation.

2 ripe, fresh California avocados, seeded and peeled
70g vegan white chocolate
2-4 teaspoons formal grade matcha powder, to taste
1 teaspoon vanilla bean paste (optional)
Maple syrup, to sweeten as needed (optional)
fresh mint, for garnish (optional)

method
1. Melt the white chocolate in the microwave at 15 second intervals, stirring in between. Add to food processor along with avocado and matcha powder.
2. Blend until completely smooth. Taste and adjust by adding more matcha or maple syrup if desired. If using vanilla bean paste, add it to the blender at this stage.
3. When completely smooth, transfer to small glass cups for serving. Dust with a thin layer of matcha powder on top and fresh mint for garnish, if desired.
