If the word pudding makes you think of a fancy dessert that takes a long time to prepare, don’t worry.
Chia pudding is a spoonable jelly made from chia seeds that are simply soaked in water or milk.
You can then balance it out with toppings and spices to make one delicious breakfast or a power snack.
In our recipe we have a Matcha flavored milkstirred in the seeds and let them soak until thick and jelly-like.
Then we topped it all off with a combination of delicious toppings!
Wondering what makes chia pudding so jelly-like?
It’s all thanks to some special fibers!
Chia seeds are among the highest fiber foods on the planet, weight for weight.
These fibers, called soluble fiberdissolve in water and become a viscous substance.
The longer you let the seeds soak, the thicker the pudding will be!
Not only is the fiber in chia seeds the magic behind your pudding, but it’s also good for you in so many ways, from fighting cravings to lowering cholesterol.
Now add the goodness of matcha and you get an even bigger one health boost.

Ingredients

matcha powder | 1 teaspoon |
oat milk | 90ml |
Chia seeds | 1 tbsp |
toppings | |
Soy yoghurt (vanilla/coconut flavor) | 200 grams |
Raspberries (fresh or frozen) | 60 g |
Puffed rice (or oatmeal or granola) | 30 g |
Step 1
Put a splash of oat milk in a mug and add the matcha powder.
Use a matcha whisk, frother or just a spoon to incorporate the powder into the milk.
There shouldn’t be any lumps.
Then work in the remaining milk and stir in the chia seeds.

Pour the mixture into a mug, jar, or container, cover or seal, and place in the refrigerator.
Soak the chia seeds in the matcha milk for at least 20 minutes so they thicken and form a jelly-like pudding.
The longer you soak the chia seeds, the thicker and more spoonable the pudding will be: soaking for 1 hour gives the best texture.
You can also prepare the chia pudding the day before and leave it overnight, ready for breakfast.

You can enjoy it like this (1), maybe with some syrup (or honey) if you like it sweeter.
Or you can top it with soy yogurt, puffed rice cereal, and raspberries for a balanced breakfast or filling snack (2).

The best plant-based milk for this green tea pudding is either oat or coconut milk as they are a little sweet and creamy. But you can also use the lower-calorie almond milk or the protein-rich soy milk.

Other delicious toppings you can try for this matcha pudding include green apples, strawberries, goji berries, toasted almonds, and cacao nibs.

Prepare 3-4 individual pots/jars of this matcha chia pudding (including toppings) and store sealed in the refrigerator. They’ve got all your breakfasts or snacks sorted for half the week!

Chia seeds contain tons of good fiber, but if you’re not used to eating them, they can make you bloat a little. So you can start with a smaller serving size of 1/2 tbsp seeds instead of 1 tbsp and gradually increase.
