Maple Bacon Pancakes are fluffy buttermilk pancakes sweetened with brown sugar and maple syrup with crispy bacon bits inside and on top of the pancakes. A real breakfast treat!

Maple Bacon Pancakes
We all love a good weekend breakfast, and a couple of eggs, a stack of pancakes, and a side of bacon are the holy grail. But I decided to spice up the usual batch of pancakes by adding crispy maple bacon right into the pancake batter. I’m telling you, I wasn’t too sure when I thought it would work, but they are AMAZING!
A while back I made some pancake dippers similar to these, but I wanted the pancake itself to be a little sweet… a bit like a McGriddle. The savory bacon mixed with the sweetness of the pancake and the maple syrup is SO good. And the maple bacon fritters in the pancake have JUST the right amount. I’m not sure I’ll ever go back to my regular buttermilk pancakes!
Ingredients for Maple Bacon Pancakes

- Bacon. I like to use maple bacon in this recipe to enhance the maple flavor even more. However, you can use any bacon you prefer.
- Dry Ingredients: All-Purpose Flour, Baking Powder, Kosher Salt
- Dark Brown Sugar. You can also use light brown sugar if you have it. Just make sure your dark brown sugar doesn’t form clumps!
- maple syrup. You can use straight maple syrup or any brand. I’m not picky about the strain you use!
- eggs. Use large eggs for this recipe.
- Milk. You can use 2% or whole milk depending on what you have on hand.
- vanilla extract. A bit of vanilla always goes well with pancakes.
- rapeseed oil. You can also use vegetable oil. Any light oil will do. I just prefer not to use butter in this recipe because the oil keeps it fluffy and fluffy. You can also use melted butter if you like, but butter contains water, which can make your pancakes a bit heavier.
To Prepare Maple Bacon Pancakes:
The steps to making these pancakes are super easy, and you can prep the bacon ahead of time and mix it into the batter! The total cooking time is short, so you’ll have an amazing breakfast in no time!

Cook the bacon crispy. I like to bake my bacon to make it easier and cleaner. This recipe uses a whole pound of bacon that fits on my largest baking sheet. I bake it at 200C for about 15 minutes until crispy. I find my oven doesn’t cook evenly, so I monitor and halfway through, rotate the pan or move a few pieces around so they’re all cooked evenly.
As I said, you should bake it crispy since you’re adding it to the pancake batter, which will naturally soften it as it stands. So crispy is better!


The pancake batter mixes very quickly, and you stir maple syrup and dark brown sugar directly into the pancake mix to add sweetness and flavor. Whisk the wet ingredients separately in a medium bowl, then add to the dry ingredients in a large bowl until there are no lumps. Then stir in the bacon straight away. You can set aside some bacon to sprinkle on top when serving these.
Cook the pancakes on a griddle over medium-low heat, making sure the sides are set and the bubbles pop on top before flipping. I’ve been impatient more than once which always resulted in messy pancakes!
TIP: To pour the pancake batter onto the griddle or pan, use a measuring cup so you get the same pancake size every time. I have a pancake batter dispenser that I love, but since there are chopped bacon bits in the batter it clogs, so I don’t recommend using it for this recipe.

If you’re making pancakes for a crowd
The only thing about pancakes is that you can only make a limited amount at a time unless you have a large griddle. When I make pancakes for the family, I like to make them all and put them on a large baking sheet in the oven so we can all sit down and enjoy breakfast together.

- Drizzle some cream cheese frosting on top to completely cover the top delish
