Low Sugar Banana Spinach Muffins

Spinach for Breakfast; muffin style! Okay, first I’ll say you can’t taste the spinach. They taste like banana muffins that are green 😉 They have no added refined sugar (just banana and applesauce), so they’re perfect for kids.

I like to sprinkle a few little chocolate chips on top, which adds sugar, but also adds fun 🙂 These are so simple to make. Get your kids to help you in the kitchen!

  1. 1 1/4 cups whole, old-fashioned oats
  2. 2 medium ripe bananas
  3. 1/3 cup unsweetened applesauce
  4. 1 large egg
  5. 1 teaspoon ground cinnamon
  6. 1 1/2 teaspoons baking powder
  7. 1/2 teaspoon baking soda
  8. 1 large handful of spinach
  1. preheat oven to 350F
  2. add the oats to a food processor and process until a flour forms (it won’t be a perfect flour consistency)
  3. add everything else to the food processor and process until combined
  4. sterilize a 24-slot mini muffin tin with oil
  5. fill each slot almost completely
  6. if desired, sprinkle mini chocolate chips on top
  7. Bake for 13 minutes, then let cool in the pan for 10 minutes before removing and placing on a wire rack.
  8. store in an airtight container in the fridge or freeze!
