Our Cooking Club is a fun way to celebrate the Love & Lemons reader community. The concept is super simple – I choose a recipe every month. You can do it and email me a photo. At the end of the month, I will randomly select a winner who will receive a prize.
I love the sense of community that comes when so many people cook a recipe each month. We’re kicking off our January challenge today with our Kale Caesar Salad recipe and I hope you’re joining us. This is how it works:
Join the Love & Lemons Cooking Club
- Each month I choose a seasonal recipe. Sign up for our email list so you’ll know as soon as I share each month’s recipe.
- Make this recipe throughout the month.
- Send a picture of it to [email protected] by the end of the month. This time the deadline is January 31st!
- Leave a comment for a bonus entry (Enter your first and last name) in the challenge recipe blog post after submitting your photo.
- For another bonus entry, post your photo on Instagram and tag it @loveandlemons and #loveandlemonscookingclub.
The Prize: A $200 Whole Foods Gift Certificate!
At the end of the month I will randomly pick a winner and post all the photos. This time we are giving away one $200 Whole Foods Gift Card.
I love this recipe because it’s super versatile (serve as a side or for lunch!) and SO delicious. Tender kale mixes with crispy romaine, garlic croutons and grated parmesan, and a creamy, tangy dressing ties it all together. Top it off with roasted chickpeas and diced avocado for even more texture!
I offer two dressing options in this recipe. You can make my easy Greek Yogurt Caesar Dressing or my (just as easy) vegan cashew-based Caesar Dressing. Both are light, salty and creamy – you can’t go wrong! If you want to make the salad completely vegan, make the vegan dressing and replace the cheese with crumbles made from vegan parmesan. I hope you love this one!

Last month’s recipe was our Broccoli Cheddar Soup, featuring this vegan broccoli soup as a dairy-free alternative. Creamy, cozy, and loaded with cheese flavor, these recipes are two of our favorite comfort foods—especially Jack’s! We were so happy to hear how much you and your families loved them. We will be repeating them during the cold winter months and I hope you will too!
