Lemon Poppy Seed Scones | Jovina is cooking

Ingredients

2 cups all-purpose flour
½ cup granulated sugar
2 tablespoons poppy seeds
2 large lemons
1 tablespoon baking powder
½ teaspoon baking soda
1 teaspoon of salt
1 stick of cold unsalted butter
½ cup cream
¼ cup fresh lemon juice

directions

Preheat oven to 400 degrees F. In a large bowl, mix together the flour, granulated sugar, poppy seeds, lemon zest, baking powder, baking soda, and salt. Using a pastry cutter or two knives, score butter until mixture resembles a very coarse flour. Pour in whipping cream, then add the lemon juice and stir until a dough forms.
Squeeze the dough with your hands and gently press into a ball.

Transfer the dough to a parchment-lined baking sheet and shape into an 8-inch disc. Cut into 8 wedges, separating so the scones are about 1 inch apart. Bake about 15 minutes until golden brown. Place the scones on a wire rack and let cool.
