Lazy Chicken Tacos al Pastor is an easy, delicious dinner the whole family will love!

I love simple dishes that involve throwing ingredients in the slow cooker – especially ones that are so flavorful yet so easy to make!

Tacos al pastor is traditionally made with pork, and the marinated and cooked meat is shaved onto the tortilla and topped with pineapple, cilantro, and cotija cheese.

Most people don’t have the “setup” to cook these this way, so I’ll present you with a slow-cooked alternative.

Chicken + all the amazing flavors and spices…softened and shredded to taco perfection.

I’ve found that one ingredient to be CRUCIAL to the flavor profile of these tacos, and there really isn’t a great alternative. If you can’t find it at your local grocery store, you can try your local international store or buy a can (or two!) from Amazon.

Ingredients

  • 3 large boneless, skinless chicken breast
  • 7 oz. can chipotle peppers in adobo sauce
  • 8th oz. can crushed pineapple
  • 1 small White Onion finely chopped
  • 1 lime juiced and seasoned
  • 1 orange juiced and seasoned
  • 16 Corn tortillas or taco shells
  • fresh pineapple thinly sliced, garnish
  • freshly chopped coriander garnish
  • Cotjia cheese garnish

instructions

  • Place the chicken breasts in the bottom of the slow cooker. Pour over the chiptole peppers, mashed pineapple with juice, and chopped onion. Stir gently to combine.

  • Squeeze and grate the lime and orange, then stir gently.

  • Set the slow cooker to low and cook for 8 hours. At the end of the cooking cycle, shred the chicken into the sauce.

  • Warm corn tortillas or taco shells and place the shredded chicken on top of the tortilla with some of the sauce. Top with sliced ​​pineapple, chopped cilantro, and cotija cheese. Enjoy!
