These IKEA-inspired veggie balls are packed with nine different vegetables! They are tasty, healthy and easy to make. Although they are not gluten-free per recipe, you can easily make them gluten-free if you use GF breadcrumbs.
This vegetable is high in force versatileNot only can you use it in many dishes (served with mashed potatoes, rice, couscous, salads, wraps, etc.) you can mix and match the vegetables as you wish/need.
The trick to making veggie balls that hold their shape well is to prepare the vegetables accordingly. I divide the vegetables into two groups: The Cooked vegetables And No-Cook-Veggie. If you don’t pre-cook vegetables that lose water and soften when heated, they will do so when they are formed into a ball, resulting in mushy, misshapen, very soft balls. So we’ll chop broccoli, carrots, bell peppers, onions and garlic and cook them in a pan before mixing them with the other vegetables (chickpeas, corn and peas).
Then you just need to add spices and breadcrumbs, form the balls, bake them and you’re done. Easy!

How to Make Veggie Balls
As always you’ll find the full recipe in the box below, but I’d first like to give you an overview of the key ingredients and process with step-by-step photos.
Components and possible replacements
You will need:
- red onion
- yellow onion
- garlic
- the carrot
- Red pepper bells
- Broccoli
- chickpeas
- Fresh parsley
- corn
- the pea
- Spices: salt, caraway, dried thyme, paprika powder
If you don’t have one or the other, don’t stress about it. The most important things to stick the mixture together are the chickpeas and breadcrumbs, but everything else is versatile.

Veggie Balls (IKEA-Style)

Use a food processor to chop To cook vegetables (onion, garlic, carrot, red bell pepper and broccoli).

cooking Saute chopped vegetables in a large pan over medium-high heat until soft.

Now chop in a food processor No-cook vegetables (chickpeas, parsley, corn, and peas).

Add the cooked vegetables, spices and breadcrumbs to the chickpea mixture and pulse until everything is smooth. combined.

Preheat Preheat oven to 350°F/180°C.

form Equal sized balls (this works best if you use a small ice cream scoop and then roll them in your hands to smooth them out). Place them on a baking tray lined with parchment paper. You can spray them with oil to make them a little more crispy.
