Prepare the roast

To prepare the brisket for cooking, first rinse it under cold water. This will remove excess salt from the surface of the meat.

We highly recommend using homemade corned beef seasoning so you have enough to season the roast and cooking water. You can also adjust the flavors to suit your taste.

  1. Do not remove the grease cap. It keeps the roast moist and adds flavor as it cooks. Remove when serving if necessary.
  2. Store-bought corned beef is high in sodium. To reduce, soak the roast in cold water for up to 4 hours, changing the water every hour.
  3. Try to use homemade condiments as the packet of condiments that comes with the roast isn’t a large amount. We coat the roast AND add some of it to the cooking water to maximize flavor.
  4. Substitute beer for the cooking water or broth for even more flavor. Guinness is obviously a good choice.

  6. Let the roast rest for 10-15 minutes before slicing to give the meat time to redistribute the juices.
