I’m all for batch cooking…do it all the time. But batch grilling.

Genius. It’s just so smart. (It’s not smart. It’s brilliant. I tried to think of a synonym for genius. But in this case there isn’t one.)

The marinade

Not sure how I’m going to use up all the rotisserie chicken yet, so I wanted to keep the marinade simple. Something to add a touch of neutral flavor to the chicken…Now, wouldn’t we have wanted teriyaki-flavored chicken chunks for a sun-dried tomato and chicken pasta salad, would we?!?

Sorry I didn’t measure that out…I’m just giving you some ratios…since the amount will depend on how many chickens you’re grilling.

  • 1 part red wine vinegar
  • salt and pepper to taste

The process

1. Marinate for at least 30 minutes… the longer the better… the longer the juicier… the longer… well, better!

3. Decide how you want to divide your chicken… leave some whole, slice, dice… however you like. For our family, 2 large chicken breasts are perfect for most meals. I diced 6 chicken breasts and sliced ​​6 chicken breasts.

4. Stash the sliced ​​chicken into the servings you need for your family and freeze.

The time factor

5 minutes to prepare the marinade and get all the chickens out of their packages into the marinade.

15-20 minutes to grill (although I did have those on the grill with another dinner).

I think I’ll do this again later in the summer… and again in mid-late fall! Would love to have some of that grilled chicken flavor during the winter months… without having to shiver outside in front of the grill!!!
