Homemade Walnut Milk – Conscious Eaters

I love making almond milk at home. But for some reason, I have never made walnut milk at home before! We love walnuts in my family, yet converting walnuts into homemade walnut milk has never occurred to me. I’ve been making homemade almond milk and homemade oat milk for ages, but now I’m officially obsessed with homemade walnut milk. I love to pour it over a bowl of fruit cereal or use it to bake our favorite vegan muffins. I hope you give this walnut milk recipe a try.

  • walnut – I love buying my walnuts in bulk to make this homemade walnut milk really affordable. If you don’t have a high-speed blender, you’ll need to soak your walnuts before blending them in the milk. If you have a high speed blender, such as a Vitamix, it is possible to skip the soaking process.
  • the water – Cold, filtered water is the water I like to use when making homemade walnut milk.
  • salt – Salt is optional, but I always like to add a pinch of salt to my homemade almond milk.

Substitutions and Alterations

  • Sweetened walnut milk – To sweeten your walnut milk, mix in some maple syrup or Medjool dates. You can make your homemade walnut milk as sweet as you like.
  • Vanilla Walnut Milk – For vanilla walnut milk, add 1-3 teaspoons of vanilla extract (and some sweetener, if desired!) while mixing in your walnuts. This will make delicious, vanilla walnut milk!
  • Chocolate walnut milk – Add 1-2 tablespoons of cocoa powder and 2-4 tablespoons of maple syrup to the walnuts and water in your blender and blend until smooth. Once you strain the milk, you get creamy, chocolatey walnut milk!
  • Other nut milks – Obviously, if you substitute walnuts for other types of nuts or seeds, you won’t have walnut milk. But you can use 1 cup of any nut or seed you like to make a variety of non-dairy milks at home, like homemade almond milk and cashew milk!

Equipment

Making homemade almond milk is very easy, but you need to have a few small kitchen tools and items on hand.

  • the bowl – You will need a regular bowl to soak your walnuts before mixing.
  • blender – Whenever I make homemade almond milk I like to use my Vitamix or another brand of high speed blender. But you can also make almond milk with a regular blender. You must soak your nuts thoroughly before mixing them.
  • Nut milk bag – I have used a few almond milk bags over the years and I love the rounded edge bags as I find they are easier to clean. You can also use a double layer of cheesecloth, but if you can get an almond milk bag, it’s a great, reusable tool to have on hand!
  • Jars – You will need either a 1 liter jar or several smaller jars to store your homemade walnut milk. Swing top 1 liter jars are my favorite way to store homemade almond milk, but you can use any other type of sealable jar you have on hand.

How to Make Homemade Walnut Milk

Step 1: Soak walnuts in water overnight or for about 8 hours. After soaking the walnuts, drain the soaking water, rinse and place in a blender. Add filtered water, a pinch of salt and any flavorings/sweeteners you like.

Step 2: Blend the walnuts, water and flavoring for about a minute or until white and smooth.

Nut milk is strained through an almond milk bag into a square, glass container.

Step 3: Pour the milk through an almond milk bag or two layers of cheesecloth and use your hands to squeeze out as much milk as possible. Save the pulp for another use or discard it.

Step 4: Pour the strained milk into a sealable bottle and store in the fridge for 3-4 days.

You can store your homemade walnut milk in an airtight jar or container in the refrigerator for 3-4 days. Before enjoying your milk, shake it well as the walnut pulp in the milk will settle to the bottom of the jar. I like to use swing-top bottles to store my homemade almond milk, but any other type of sealable pitcher or jar should work.

Expert tips

  1. For super creamy walnut milk, be sure to soak your walnuts overnight before mixing them into the milk. If you don’t have a ton of time or forget to soak your walnuts, you can always soak them in boiling water for about 30 minutes. However, if you have a high-speed blender, such as a Vitamix, you can get away with not soaking the nuts if necessary.
  2. Do not discard the walnut pulp after straining the milk! You can add it to smoothies, dehydrate it into almond flour, or use it to bake cookies or other goodies.

What are the nutritional value of walnuts?

Walnuts are high in good fats, including polyunsaturated fats and omega-3 fatty acids. They can help lower cholesterol and reduce inflammation that can lead to heart disease. Walnuts are an excellent source of antioxidants and can help promote a healthy gut as they feed the beneficial bacteria in your gut.

How many walnuts should I eat a day?

Too much of anything, even a good thing, is a bad thing. So walnuts are very nutritious but eat about 2-3oz. One day is probably best. Moderation in everything!

What can be used to make almond milk?

You can use all kinds of nuts and seeds to make homemade milk! I really don’t think there is a nut or seed you can’t use, although some may be better than others. Some of my favorites are almonds, cashews, walnuts, hazelnuts, macadamia nuts and flax seeds.

How long does homemade almond milk last?

This homemade walnut milk is like any other homemade nut or seed milk and should last about 3-4 days if stored in an airtight container in the refrigerator. Before using homemade almond milk, I like to smell it so it doesn’t go off and give it a good shake.

  • After soaking the walnuts, rinse them and place them in a high speed blender. Add 3-4 cups of water and mix on high for about 1 minute or until foamy, white and smooth.

  • Pour the milk through an almond milk bag or two layers of cheesecloth and use your hands to squeeze out as much milk as possible.
  • If you are using the optional ingredients, pour the strained milk back into your rinsed blender and add vanilla extract and liquid sweetener to taste. Blend until combined.*
  • Pour the strained milk into an air tight container and store in the fridge for 3-4 days.

Comment

– The less water you use, the thicker and creamier your milk will be. I like to use 4 cups of water because I find the milk tastes too creamy and I get a little more milk per cup of walnuts.
– If you want to sweeten your milk with dates, add crushed dates while mixing walnuts and water. Strain the milk through an almond milk bag to remove the walnut pulp and date pieces.
