All the ingredients needed to make this vegan Ferrero Rocher recipe.  Each element is labeled with text.
  • Nut Butter: For more hazelnut flavor, homemade or store-bought hazelnut butter can be used instead of almond butter. See the section below on how to make your own hazelnut butter.
  • Cocoa powder: You can use any cocoa powder or cocoa powder that you enjoy.
  • Maple syrup: You can use any liquid sweetener here, like brown rice syrup or agave syrup Don’t substitute a grainy dessert.
  • Hazelnuts (Filberts): You will need whole hazelnuts for the center and chopped hazelnuts for the coating. Blanched, raw or unsalted roasted hazelnuts work.
  • chocolate: I used dairy-free semi-sweet chocolate but you can use any chocolate or dark chocolate.
  • Coconut Oil: This helps thin the chocolate so it’s easier to coat the truffles. Plant-based butter works as an alternative.

Step by step instructions

Mix the chocolate fudge batter together in a large glass mixing bowl.

Make the fudge

Mix in the vanilla, Maple syrupMix the almond butter (or hazelnut butter), cocoa powder and salt in a mixing bowl until it forms a uniform dough.

Refrigerate the mixture for 10 minutes, this will make it easier to roll into balls.

Place fudge balls on a baking tray.  One of them has a hazelnut pressed into the middle.

After 10 minutes, remove the filling mixture from the fridge. Shape the mixture into balls, using a little 1 tablespoon of the mixture per ball. You should get about 14-16 small truffles.

Place the coated balls back into the tray. Once they are coated, refrigerate the tray until the chocolate sets. It should take about 20-30 minutes. They are now ready to enjoy!

Should I use hazelnuts?

No, you can use any nut to make this recipe. Almonds, pecans or pistachios will work well.

Expert tips

  • Make sure to finely chop the hazelnuts for coating. If the pieces are too large, it is difficult to cover the truffles. You can pulse them in a food processor or take some time to finely chop them with a knife.

  • The fudge filling is not too sweet so I recommend semi-sweet chocolate instead of dark chocolate for the coating to add more sweetness. You can use dark chocolate if you don’t like them less sweet.

How to Skin Hazelnuts

I didn’t remove the skins from the hazelnuts but the skins can be a bit bitter so if you want to take the extra step you might want to consider that. Alternatively, you can use blanched hazelnuts.

To remove the skins, roast the hazelnuts in a pan in the oven at 350 F for 10-15 minutes until fragrant, slightly blistered and browned. After roasting, cover with a dish cloth and let sit in the pan for a few minutes. Rub with dish cloth to remove skins.

How to Make Homemade Hazelnut Butter

If you want to make your own hazelnut butter for fudge, toast about 3 cups of hazelnuts at 350 F for 10-15 minutes then let them cool in the pan for at least 10 minutes.

Add them one food processor or high-speed blender and process until they form a smooth, runny butter consistency. This may take 5-15 minutes depending on your strength blender or food processor.

  • Recommended to store in a sealed container in the fridge for up to 2 weeks.
  • They can be stored in the fridge for up to 3 months. Soften at room temperature for 5-10 minutes before serving.
  • They are fine to store at room temperature in a sealed container in a cool climate but will melt if it gets too hot.
  • I recommend chilling until just before serving.

  1. Make the fudge filling: Add the cocoa powder, maple syrup, almond butter, salt and vanilla to a mixing bowl and stir until it forms a uniform dough. Place the bowl in the refrigerator for 10 minutes to harden. Meanwhile, line a baking tray with parchment paper.
  2. Ball Shape: After 10 minutes, remove the filling mixture from the fridge. Form the mixture into balls using a scant 1 tbsp. You should get 14 small balls. Use your finger to push a whole hazelnut into the center of each ball, making sure the hazelnut is completely covered by the fudge mixture. Place the balls on the baking tray and refrigerate for at least 10 minutes.
  3. Melt the chocolate: Meanwhile, melt the chocolate chips and coconut oil together in the microwave in 30-second increments, stirring as you go. Once the chocolate has melted, set aside to cool and chop your hazelnuts. Be sure to chop the hazelnuts very finely so that they resemble a grainy dough. You can chop them with a knife, but it’s faster and easier to use a food processor. Place chopped hazelnuts in a shallow bowl.
  4. Coat in chocolate and hazelnuts: After 10 minutes take out the baking tray from the fridge. Use a fork and/or a toothpick to dip each ball into the melted chocolate. Tap the handle of the fork against the edge of the bowl to tap off any excess chocolate. Transfer the ball to the bowl of hazelnuts and sprinkle with nuts until it is completely coated. Place back on the tray.
