Homemade copycat Velveeta
ingredients
1 cup of boiling water
1 packet unflavored gelatin (1/4 oz)
6 tablespoons dried milk powder
Shredded Cheddar Cheese (16oz)

directions
- Mix together the unflavored gelatin and powdered milk before adding to boiling water in a blender (or food processor) and puree until combined.
- Add shredded cheese a few handfuls at a time and continue to mix until smooth. Open and scrape down the sides with a spatula a few times. Process for about 5 minutes to fully emulsify.
- Pour/scoop the mixture into a small loaf pan or plastic wrap lined dish.
- Cover/wrap tightly and refrigerate for 8 hours.
- Cooking Notes: I tried it in liquid form and it tasted salty, but once solid the saltiness went away.
