When should I serve my coleslaw?

If you want to serve it the same day, you can add the dressing as soon as it’s ready. It’s a good idea to let the cabbage and dressing exchange flavors in the fridge for a few hours. However, if you want your salad to be very crispy, season it no more than half an hour before serving.

If you plan to keep the coleslaw for more than a day, it’s better to wait until the day you’re going to serve the salad to add the dressing. Especially if you’re thinking about freezing the cabbage, it’s far better to wait before adding the dressing to avoid having the dressing in the salad have a watery consistency.
