How to make a Heart Shaped Chocolate Pavlova.
This elegant dessert is easy to make, yet looks and tastes like it was made by a professional pastry chef.
For this recipe, you can make all three parts of the dessert, the meringue, ganache, and icing, ahead of time.
For the cocoa meringue you only need egg white, powdered sugar, cocoa and some vinegar. You start by beating the egg whites until soft peaks form. Gradually add powdered sugar, cocoa and vinegar. After all ingredients are incorporated, beat on high speed until stiff peaks form. The only special step in making pavlova is the baking time and temperature. It needs to bake slowly at 210F (100C) with the fan on for about 1-2 hours, here it depends on your oven.
For the chocolate ganache, heat the whipped cream and then pour it over the chocolate. Stir until shiny. It is best to use it while it is still warm as it will harden as it cools. Drizzle the chocolate ganache over the cooled pavlova.

The vanilla cream cheese is very light and fluffy. All you have to do is mix all the ingredients together with a hand mixer.
The pavlova is very easy to assemble. You have to top all three parts of the dessert and then finish with fruit and grated chocolate.
This chocolate pavlova with whipped cream and berries will keep in the fridge for several hours to a day. Since the meringue absorbs the moisture from the cream and can get soggy, it’s best to serve right after the topping.

Heart shaped chocolate pavlova
On Valentine’s Day, what better way to impress your Valentine than with a heart-shaped chocolate pavlova that’s drizzled with chocolate and topped with fluffy cream cheese and fresh berries?
ingredients
Chocolate pavlova
- 2 protein
- 1 pinch of salt
- 1 Cup (120g) powdered sugar
- 1 tsp (5mL) Vinegar
- 1 tsp (5 g) cocoa powder
Chocolate ganache
- 2 oz (60 g) semi-sweet chocolate
- 1/4 Cup (60 g) whipped cream
Cream Cheese Frosting
- 7 oz (200 g) cream cheese
- 1/4 Cup (30g) powdered sugar
- 1/2 tsp (3g) Vanilla Extract
For decoration
- fresh berries
- chocolate
- powdered sugar
instructions
Prepare the pavlova

Preheat the oven to 210F (100C) with the fan on. Draw a large heart, about 18 cm in diameter, on a piece of parchment paper. Note that it will spread as it bakes. Turn it over so the pencil is on the bottom and place it on a baking sheet.

In a stand mixer, beat the egg whites with a pinch of salt until soft peaks form, which should take a few minutes.

On medium speed add the powdered sugar one tablespoon at a time until incorporated. Beat the meringue on high speed until the sugar has dissolved.

Add the cocoa powder and mix until incorporated.

Finally add the vinegar and mix on high speed until very stiff peaks form.

Gently place the meringue onto the prepared parchment and use a spatula to fill in the shape of the heart.

Place in the oven for about 1 1/2 – 2 hours, depending on your oven. When done, it should lift slightly from the parchment paper. If it’s sticky, let it cook a little longer. At the end of the baking time, switch off the oven, open the oven door a crack and let the meringue cool down slowly in the warm oven.
Prepare the vanilla cream cheese frosting.
Prepare the chocolate ganache.
Plate up the chocolate pavlova.

While the chocolate ganache is still warm, drizzle it over the pavlova. Allow to cool and harden completely.

Using a spatula or spoon, pour the entire cream cheese glaze over the drizzled pavlova.

Use fresh berries, grated chocolate, flaked almonds and sprinkles for the garnish. Enjoy!
