To start with, it is important to prepare the mushrooms. Not all mushrooms are suitable for stuffing, the ones with large caps are usually used for stuffing recipes. Here we shall use the portobello mushroom which is a good choice for this recipe. Now that you have brought the mushrooms home make sure to clean them well before using.

Wash them first and then nicely cut off their stems, so that you are only left with the mushroom caps. Clean the side of the mushroom caps as well. The best way is to drop the mushroom in a bowl of cold water, leave them for about 10 minutes when all the dirt is released into the water, remove the mushrooms from the water and rinse them. To use for the recipe, pat them dry using a paper towel.

In this recipe, we shall use mozzarella, however also recommend using goats cheese for the filling. First, dice the cheese and then leave it at room temperature before adding to the filling.

Here the filling is prepared using the turkey sausages, but you can also use other options of minced chicken, minced beef or pork, etc. to prepare the stuffing. The use of poblano pepper, along with basic seasoning adds quite a strong taste into the filling.

Stuffed Mushrooms and Meal Prepping:

If you don’t get the time to cook these mushroom rights before the meal, then you can always meal prep them. Stuffed mushrooms can be easily stored and served later after reheating, without any change of taste, given that you are properly storing them. Here are few simple tips to meal prep:

There are two ways
to store the stuffed mushrooms; you can either store them uncooked and then
cook right before the serving. And the other is to store cooked mushrooms and

mushrooms or refrigerate them in a closed container. When it comes to freezing
you can store them for as many as 6-7 days, whereas if you are refrigerating
them, they can be stored only for 24 hours.

Instead of storing the whole stuffed mushrooms, you can also separately preserve the filling and the mushrooms then simply assemble them before cooking and serving. It all depends on your own convenience.
