However, there are some earlier references to the dish (such as in a 1929 cookbook) that suggest it may have originated elsewhere. In any case, we owe this concept to the Swedes!
While slicing Hasselback potatoes takes a little time, the ingredients are simple. What you need for this recipe:

Yukon Gold or red potatoes work too! These are called waxy potatoes and are often used for frying, fries, and so on. They keep their shape better when baked or roasted. If you use other types of potatoes, you may need to adjust the roasting time: and especially if they are smaller than what the recipe says!

How to cut Hasselback potatoes
Here’s the big question: How do you cut Hasselback potatoes? These beautiful thin slices look as if they were made with a special cutting device: and there really is such a thing! If you make Hasselback potatoes frequently, you may want to invest in the dedicated potato cutter. If not, all you need is a pair of chopsticks or something similar: pencils, wooden spoons, etc. Here’s how to do it:
- Insert two chopsticks on the sides of a potato. These act as guides to prevent a complete cut through.
- Cut the potato into 1/8 inch slicesmaking sure that the guides do not reach all the way to the floor.
- Pay special attention to the ends of potatoes that need a flat cut: The guides don’t help here! Repeat for each potato.
A few notes on baking time
This Hasselback Potato recipe calls for baking the potatoes for a total of 1 hour and 15 minutes, removing them from the oven once after 1 hour to brush with olive oil again and add salt. Here are a few tips for baking:
- Adjust the baking time if you have smaller potatoes or use a different variety. The most important thing you’re looking for is that the potato is completely tender and cooked through, with crispy slices beginning to separate.
- Add more oil and salt once the slices are separated. The initial 1 hour bake time should work for most 12-ounce potatoes. But if your potatoes are smaller, check them after about 45 minutes.
- Bake again, then brush with garlic butter. We’ve found that the best way to add flavor to Hasselback potatoes is to finish with garlic butter and flaky salt to give them a wonderfully flavorful taste. It’s difficult to get into all the cracks and crevices, so it’s important to season at the end.

- Preheat oven to 450°F.
- Wash and dry the potatoes.
- Place two chopsticks* on the sides of a potato: these will act as a guide to prevent cutting through. Slice a potato into 1/8-inch slices, making sure you don’t go all the way to the bottom using the guides. Pay special attention to the ends of the potatoes, which need a flat cut: the guides won’t help here! Repeat for each potato.
- Place the potatoes on a baking sheet lined with parchment or aluminum foil. Brush with 1 tbsp olive oil.
- Bake for 60 minutes until the potato slices start to separate. Remove the tray from the oven and brush with the remaining 1 tablespoon olive oil. Sprinkle evenly with ¾ teaspoon Kosher salt.
- Place the potatoes back in the oven and bake for 10 to 15 minutes (or less for smaller potatoes) until crisp, lightly browned and easy to pierce with a paring knife. Meanwhile, melt the butter in a small saucepan. Stir in the garlic and Italian seasoning and remove from heat.
- When the potatoes are done, remove them from the oven and brush them with the melted spiced butter, making sure to evenly distribute any spices that sink to the bottom. Gently fan the potatoes with one hand while sprinkling some flaky sea salt over the potatoes. Garnish with parsley or chives and serve immediately.
