Like Russian salad? Like Haitian cuisine? Well what do you know! The wonderful Haitians have their own take on the classic Russian salad, and today we’re going to show you how to make it. Nice and simple.
Haitian Russian Salad (also known as Salade Russe or Salade de Betteraves) is quite similar to the salad you may already be familiar with, but contains few other ingredients native to Haiti. What you get is a delicious potato, carrot and mayo salad with beets and bell peppers.
Don’t worry if the sound of “Mayo” rang your alarm bells. We use a vegan mayonnaise in this recipe, so you don’t have to worry about food allergens. We can even show you how to make homemade vegan mayo if you have a little time!
So what’s so nice about this Haitian beet salad? It’s colorful and delicious, but with a surprisingly subtle flavor for a Caribbean dish. As such, you can pair it with other main dishes without taking anything away from it. Basically, it is an ideal side dish.
And because of the beets and peppers, it’s even healthier than the classic Russian salad. Beets, in particular, are high in antioxidants, as you can tell by their rich deep red or purple color. We love them and have even recently started growing them in our vegetable garden. Check out these other beetroot recipes if you’d like!
Overall, this Haitian Potato Salad is a breeze to make, tasty and nutritious, and you can keep it in the fridge for a good week. Sounds great right? Jump right in and enjoy!
