My favorite dip in salad form? Ah yes, hello, hello!
I’m super excited to share our new favorite side dish when I’m doing any type of taco or Tex-Mex night at home. This is such a lovely side dish – it can be a salad-like side dish that you eat with a fork or something you lift with fries. All the things you love about guacamole thrown in a bowl with tons of lime right here!
This is embarrassingly easy and doesn’t necessarily require a prescription, but it’s one of the things I’m happy to share with you so it’s on your radar. In your head when you plan remedies and think about what you want to prepare or eat. Sort of like my hummus quesadillas or mashed potatoes or ranch dressing.
I want this to have a home!
Since guacamole is one of my all-time favorite snacks, I absolutely love this option. Let’s just say it’s in constant rotation these days. It’s essentially chunky guac with lettuce…that’s what I call lettuce.
See, our local Mexican restaurant serves many of their entrees with “guacamole salad.” It happens to be a bed of shredded lettuce topped with traditional guac, which doesn’t sound like much. But it’s super good and a nice light site. Something more refreshing and lighter than rice or beans, you know?
Sometimes it is also a second side of the dish. So you get rice AND guacamole salad. I love that.
Since it’s their guacamole, I tend to bring fries to the guac salad. This isn’t uncommon since I do the same thing with a burrito bowl, even if it has rice and lettuce in it. But all I could think of was making my own guacamole salad with the guac components – instead of pureeing the guac and serving with salad. Like chunks of avocado, tomato, etc.
I’m doing this now and we LOVE it! The kids love this. It’s such a lovely side dish, especially if you’re having a heavier dish like enchiladas or even tortilla soup.
The other great thing is that you can add anything you love here. If you like red peppers or more diced onions in your guacamole, feel free to throw them in. You can throw in crumbled cotija cheese or extra cilantro.
I like to serve this with shredded or chopped lettuce – but you can also prepare larger shredded lettuce leaves. There really is no right or wrong way.
Oh, and here’s the thing – it’s not like I’m saying NOT to make guacamole. I always, always, always want guacamole. There’s never a time when I don’t want it. But if you want to change things up or make a satisfying side/dish salad for dinner (our family LOVES side options!), then this is it.

Guacamole Salad

- 8th ounces shredded lettuce
- 2 avocados, chopped
- 1 Cup chopped tomatoes
- 1 Jalapeno chilli, cut (optional!)
- ¼ Cup chopped coriander
- kosher salt and pepper
- 3 tablespoon freshly squeezed lime juice
- 1 tablespoon olive oil

Mix the lettuce, avocado, tomato, jalapeños, and cilantro in a bowl. Season everything with a large pinch of salt and pepper. Drizzle with lime juice and olive oil. Toss well and serve immediately.
Also, doesn’t guacamole salad just SOUND better than regular salad? Yes.
