Ingredients
- Shrimp Skewer: Shrimp are juicy, slightly salty proteins that you can buy on skewers or easily skewer at home.
- Yogurt: Whole milk, plain yoghurt paired with lemon juice create the classic doner kebab marinade that yields delicious, tender meat.
- Garlic: Slightly nutty and very aromatic, it becomes sweeter when cooked on the grill.
- lemon juice: In combination with the yoghurt, it acts as a natural tenderizer in the marinade and provides a light, lemony taste.
- Warm spices: Cinnamon, nutmeg and allspice is a deliciously warm combination that’s very common in Lebanese cuisine and enhances the classic shawarma flavor of shrimp.
How to Make Grilled Shrimp Shawarma Skewers

Start preparing your Grilled Shrimp Shawarma Skewers by preparing the marinade. Take a casserole dish or large bowl long enough for your shrimp skewers, then grate in your garlic cloves with a micro-slicer.

Then sprinkle cinnamon, nutmeg and allspice on top. Season with some kosher salt and black pepper.

Then add the plain yoghurt.

Drizzle some olive oil over it.

And finish with fresh lemon juice.

Mix everything together until you get a thick sauce.

Then take your shrimp skewers and coat them with the doner kebab marinade, turning to coat each side.

Once each skewer is completely covered, allow to rest and marinate for at least 10-15 minutes.

Then toss the skewers onto your preheated grill over high heat and cook until the shrimp turns a bright pink color, turning once. Keep an eye on them, as cooking times may vary depending on the type of grill.

Once the shrimp are done cooking, remove them from the grill and serve immediately.

While you can grill your shrimp with or without the shell, I always peel my shrimp first (except for the tails) as this allows the marinade to penetrate the meat better.
Should you thaw shrimp before grilling?
While you could technically grill shrimp from frozen, I wouldn’t recommend it. I always thaw my seafood before cooking to ensure it cooks evenly and this improves texture.
How do you know when the shrimp are done?
Raw shrimp are initially gray in color but slowly turn pink as they cook. Once it’s a nice bright pink with no more gray left, you’ll know your shrimp are done.

Servings:
- 8th shrimp skewer (from your fish counter)
Shawarma marinade
- 1 Cup Whole milk natural yoghurt
- 2 cloves Garlic (chopped)
- 2 tablespoon lemon juice
- 2 teaspoon Cinammon
- 1.5 teaspoon Salt
- ½ teaspoon nutmeg
- ¼ teaspoon pimento
- ½ teaspoon pepper

Preheat the grill over high heat.

While the grill is preheating, stir the marinade in the bottom of a large glass pan, such as a brownie pan. Add the shrimp skewers, turning them a few times to ensure both sides are evenly coated. Marinate for about 10-15 minutes.

Spray grill with non-stick cooking spray or rub with oil. Place the shrimp skewers on the grill and cook until bright pink, about 8 to 10 minutes. Turn once. Serve immediately.
