We are pesto chicken fanatics. One of our favorite meals is our Pesto Chicken Pasta and we love making homemade pesto with fresh basil from the garden.

This grilled chicken recipe will blow your mind because you only need two simple ingredients – chicken breasts and pesto! Now you can use store-bought pesto or homemade pesto, the choice is yours!

And to make it even more festive, we skewer the chicken into cute little skewers that are perfect as a main course or appetizer.

What you need

As mentioned before, there’s nothing easier than grilled pesto chicken! 2 ingredients is all you need.

  1. Chicken breast: We recommend using boneless, skinless chicken breasts, but boneless thighs also work.
  2. Pesto: We have 2 delicious homemade pesto recipes for you to try – basil pesto and kale pesto. If you’re in a hurry, you can also use store-bought jar pesto.

How to make Grilled Pesto Chicken Skewers

Cut the chicken into 1 inch pieces, then place in a medium bowl.

Drizzle over the pesto and stir until the chicken is completely coated. Let marinate for 30 minutes or 2 hours.

Skewer the chicken pieces onto wooden or metal skewers.

Place aluminum foil on the grill and place the chicken on top. Grill over medium/high heat for 15-20 minutes or until the internal temperature is 160°F to 165°F.

According to the USDA, the safe cooking temperature for poultry is 165°F.

Let yourself rest: Remember to let the chicken rest for 5 minutes after cooking to allow the internal temperature to rise by about 1.5°C.

Ingredients

  • 1 Lb. Boneless skinless chicken breast
  • ½ Cup homemade pesto or any kind of pesto

  • Preheat the grill to medium/high heat – about 375°F.

  • Next, prepare the chicken by cutting it into 1-1/2-inch pieces. Place diced chicken in a large bowl.

  • Pour the pesto into the bowl and turn the chicken over until coated. Place the bowl in the refrigerator and allow to marinate for 30 minutes to 2 hours.

  • Thread the chicken pieces onto skewers. You can cook 5-6 skewers.

  • Place a piece of aluminum foil on the grill grate and spray with cooking spray. Grill at 375°F for 15-20 minutes, turning skewers every 5-8 minutes. Cook until the internal temperature is 160°F to 165°F.
