If you ask me what makes a perfect side dish or appetizer, bruschetta will be at the top of that list. Crusty bread with a touch of juicy and sweet tomatoes and easy to eat as finger food? It’s child’s play! With summer just around the corner I prefer to cook it on my grill instead of in the oven so I can keep my kitchen cool. I’ll spice it up a bit with my Grilled Garlic Bread Bruschetta. While garlic isn’t an entirely new flavor for this dish, incorporating it into both the toasted bread and the tomato topping gives it a little more impact.
Ingredients
- Baguette: Thin and crunchy, making it the perfect choice for a bite-sized finger food.
- Butter: Ensures the baguette is toasted evenly while helping to coat the bread with garlic.
- Garlic: Pungent, aromatic, nutty flavor that gets sweeter on the bread as it bakes, but stays a little spicier in the tomato topping as it’s raw.
- cherry tomatoes: The star of the topping and the small, juicy, sweet bites. You can also use diced Roma tomatoes or halved grape tomatoes.
- Basil: Gives the dish a fresh, peppery taste and colour.
- Olive oil: Refines the tomato topping and softens the bread slices a bit, making them easier to chew.
How to Make Grilled Garlic Bread Bruschetta

Start your bruschetta with grilled garlic bread by making the garlic butter for the bread. In a small bowl, add the softened butter, then take a micro-slicer and rub in the fresh garlic.

Then season the butter with a little salt and black pepper.

Take a fork and mix everything together until you get an even mass.

Then, depending on the consistency, spread the garlic butter on the inside of your halved baguette using either a fork, a knife, or a cooking brush.

Preheat your grill to high heat, then toast the bread buttered side up for about 3 minutes, then turn buttered side down for about 2 minutes. Keep an eye on it, you don’t want it to burn!

To prepare your tomato bruschetta topping, start by slicing your cherry tomatoes in half, then place in a large bowl.

Then add your fresh basil leaves, finely chopped, to the bowl with the tomatoes.

Take your microplane again and rub in some more fresh garlic.

And then drizzle over the extra virgin olive oil and season with some kosher salt and pepper.

Mix everything gently until evenly blended.

Then take the grilled bread butter side up and top generously with the tomato mixture. I like to pre-slice the bread before I top it.

Once the toast is topped, you’re ready to serve and enjoy your Grilled Garlic Bread Bruschetta!

- 1 Baguette (halved, lengthwise)
- ½ Cup butter (softened to room temperature)
- 4 cloves Garlic (grated)
- salt and pepper (taste good)
Tomato bruschetta
- 2 cups cherry tomatoes (halved)
- ¼ Cup basil (Chiffonade)
- 2 tablespoon olive oil
- 1 clove Garlic (grated)
- salt and pepper (taste good)

Preheat the grill on high. In a small bowl, mix together softened butter with grated garlic, salt, and pepper with a fork. Spread the mixture evenly over both halves of the baguette. Grill buttered-side up for 3 minutes, then flip and finish buttered-side down for 2 minutes (turn once).
