Grilled corn with smoky Cajun butter in foil
In the summertime, when I’m not enjoying corn in my favorite corn salad, I love to make this incredibly flavorful grilled corn on the cob. It is buttery and tastes slightly smoky with a subtle spicy note. And since we wrap the corn in foil, it stays incredibly tender and juicy.
The flavored butter we use for this corn is the same one we use for our Cajun flavored shrimp. It combines our favorite Cajun seasoning with butter, fresh garlic, and fresh cilantro (or parsley). Plus, you can make it ahead of time and use it with other veggies, or try it with shrimp or chicken.

Grill the corn, generously spread our Cajun butter over the corn on the cob, then wrap in foil. Place the foil-wrapped corn on the grill and cook for 10 to 15 minutes. When you serve the corn, pour the sizzling butter over it. It’s awesome!

If you don’t feel like grilling, you can also use your oven for roasted corn. The steps are the same: apply butter, wrap the corn in foil, and then roast it in a 200°C oven for 20 to 30 minutes. This is how we cook our roasted corn with chipotle butter. Simply!

For the tastiest, most tender corn, grill it with our delicious Cajun butter or roast it in foil. This easy corn recipe with seasoned, flavored butter is perfect for summer. It tastes fantastic, is quick to prepare and requires minimal cleaning.
For 4 people
you will need
4 ears of corn, peeled
4 tablespoons butter at room temperature
2 garlic cloves, finely chopped or grated
2 tablespoons coriander or parsley leaves, chopped
1 tablespoon homemade Cajun seasoning; see notes

1Preheat a gas grill to 400-450°F for about 10 minutes. Once the coals on a charcoal grill look ashen and white, spread them out and push most of them to one side of the grill to create a hotter, more direct grilling area. Depending on your charcoal, this can take over 30 minutes. If roasting in the oven, preheat the oven to 200°C (400°F) and place the oven rack in the center.
2Prepare the flavorful butter by mixing butter, garlic, cilantro (or parsley), and Cajun seasoning. Mix well.
3Using a spoon, spread the butter evenly over the corn cobs.
4Place the buttered corn on aluminum foil and wrap tightly to form a packet.
5To grill, cook the corn packet over indirect heat (cooler part of your grill) for 10 to 15 minutes, turning and turning once or twice during grilling.
6To roast in the oven, place the corn packet on a baking sheet and bake at 200°C (400°F) for 20 to 30 minutes, turning once during roasting.

- Cajun Spice: For best results, we recommend using our homemade Cajun blend. However, if you’d rather use a store-bought brand, you’re welcome to do so. However, keep in mind that the salt content of different brands can vary. Therefore, you may need to adjust the spices according to your taste preferences.
