what you will need

Ingredients for Grilled Grilled Chicken Thighs: Chicken Thighs, Garlic, BBQ Sauce, Olive Oil, Salt, Onion Powder and Black Pepper.

Notes on ingredients

  • chicken thigh We use bone-in and skin-on thighs because they have the most moisture and flavor.
  • Garlic cloves– Freshly squeezed gives the best taste.
  • BBQ Sauce – We like the Kinder brand’s mild BBQ sauce, but feel free to use whichever you like best.

Add-Ins and Substitutions

  • Use boneless, skinless chicken This recipe calls for bone-in skinless chicken thighs, but it can still be made with boneless skinless chicken thighs. It cooks a little faster if you choose to go this route.
  • Substitute different spices- In addition to onion powder, salt and black pepper, you can also season the meat with cayenne pepper, rosemary, thyme, sage or cumin.
  • Use a different barbecue sauce We like mild kid sauce, but you can make your own homemade BBQ sauce or use any brand you prefer.
  • add brown sugar- Increase the sweetness of this savory dish by adding brown sugar to the marinade.

How to make Grilled BBQ Chicken Thighs

  • Mix spices with oil. In a small bowl, mix together olive oil, crushed garlic, salt, pepper, and onion powder. Put aside.
  • Prepare the chicken. Wash the chicken thighs and pat dry with kitchen paper. Place them in a gallon-sized ziplock bag or large bowl.
  • Marinate. Pour the marinade mixture over the chicken thighs and seal the bag. Massage into the chicken and marinate in the fridge for a few hours or overnight.
Steps to prepare Grilled Chicken Thighs: Whisk together the oil, spices and garlic for the marinade, then add to the chicken in a ziplock bag to marinate.
  • Bake skin-side down. Preheat the grill to 450 degrees Fahrenheit. Grease the cooking grates with a little olive oil and cook the marinated chicken, skin-side down, for about 3-5 minutes.
  • Turn them over. Then turn the chicken over and grill for an additional 7 minutes or until the chicken’s internal temperature is at least 165ºF.
  • Add BBQ sauce. Then reduce the heat to low and brush on your favorite BBQ sauce, allowing the sauce to thicken on both sides of the chicken, about 1-2 minutes per side.

Pro Tip: If you want a crispier skin on the chicken, cook skin-side down a few minutes longer.

Steps to prepare BBQ Grilled Chicken Thighs: Grill the chicken skin-side down, then turn and finish with barbecue sauce.

recipe tips

  • pat dry chicken thighs The oil and water don’t mix, so use paper towels to dry the chicken thighs so the garlic oil marinade sticks to the meat.
  • Marinate for at least 2 hours The longer the meat is marinated, the more flavor and moisture it absorbs. Preparing this the night before adds great flavor to the thighs.
  • Check doneness- Use a meat thermometer to make sure the chicken is fully cooked. It should have an internal temperature of at least 165ºF.
  • Thicken the barbecue sauce Resting the gravy chicken on the grill over low heat will reduce the gravy, thicken it and taste even better. It only takes a few minutes.
