Grilled Bruschetta Chicken (Fresh and Healthy!)

The grilled bruschetta chicken is marinated and grilled to perfection and then topped with mozzarella and fresh bruschetta.

How stunning is this chicken bruschetta recipe? It’s one of our favorite grilled chicken recipes because the fresh flavors of the bruschetta paired with the chicken and mozzarella are just perfect!

What is bruschetta chicken?

Bruschetta Chicken is a dish that combines the flavors of bruschetta with grilled chicken. Bruschetta is usually made with grilled bread, tomatoes, garlic, and basil, and chicken bruschetta simply substitutes chicken for the bread.

The chicken is grilled or fried until cooked and then topped with a mixture of tomatoes, garlic, basil and mozzarella cheese.

What you need

This salad is layered and comes with a list of ingredients! Fear not, most of the ingredients for this recipe are very common and easy to find.

  • Balsamic vinegar- You will use balsamic vinegar in the chicken marinade and bruschetta topping. It adds both a sweetness and an acidity to this recipe.
  • olive oil– Use some EVOO in both the marinade and the bruschetta for this recipe! We love the flavor that olive oil brings to this recipe, so we don’t recommend using any other oil.
  • Worcestershire Most of our chicken marinades contain a touch of Worcestershire for a salty and vinegary finish.
  • Honey– You need a little honey to balance out all the flavors in this recipe. Alternatively, you can also use maple syrup!
  • Dijon mustard– The addition of some Dijon mustard adds some depth to any recipe!
  • lemon juice + zest– Refine any recipe with a little lemon juice and lemon zest.
  • Garlic- Never skip the garlic! Garlic is a key ingredient in any bruschetta recipe.
  • red pepper flakes With a little spice, everything becomes beautiful.
  • salt + Black pepper– Salt enhances all the flavors of other ingredients! At the end of the recipe, feel free to add salt and pepper to taste, but be sure to season in layers.
  • Roma tomatoes– We used Roma tomatoes for this bruschetta recipe, but you can use any other type of tomato for this recipe.
  • Red onion– We serve this bruschetta with raw red onions. If you’re not a fan of raw onions, feel free to caramelize the onions first!
  • Fresh basil leaves– Give a lot of basil leaves for the bruschetta. Tear the basil leaves into larger pieces instead of small ones, they stay fresh longer.
  • Boneless chicken breast– Buy yourself 4 large boneless skinless chicken breasts.
  • mozzarella cheese– We recommend buying a piece of mozzarella and slicing it thinly as we are trying to melt the cheese and not the mozzarella balls.
  • Balsamic reduction– After you assemble the grilled chicken bruschetta, drizzle over a balsamic reduction to finish. We used store-bought products, but feel free to make your own!

How to make bruschetta chicken

  1. marinate chicken. Mix all the ingredients for the grilled chicken marinade in a bowl, then pour over the chicken in a Ziploc bag or casserole dish. Cover and refrigerate for at least 2 hours, but for best flavor we recommend overnight.
  2. Prepare bruschetta. Chop your tomatoes, sprinkle with salt and let the tomatoes sit for 10-15 minutes to remove excess water. Discard excess water, add remaining bruschetta ingredients to bowl and mix together. Place the bruschetta in the refrigerator.
  3. Grill chicken. Remove the chicken from the refrigerator and preheat the grill to 375°F. Shake the marinade off the chicken and place the chicken on the grill. Grill over direct heat for 4 minutes on each side, then grill over direct heat for another 10 minutes.
  4. add cheese. Add the mozzarella slices to the chicken breasts and let the mozzarella melt.
  5. Assemble + drizzle. Place the chicken breasts on a plate, top the chicken breasts with the bruschetta, and then drizzle with the balsamic glaze!

Don’t forget to salt the tomatoes and drain excess water! The result is a watery bruschetta!

Grilled Bruschetta Chicken Recipe

This Grilled Bruschetta is an easy chicken recipe for any night of the week. It’s a flavorful grilled chicken topped with mozzarella and bruschetta!

Ingredients

Bruschetta topping

  • 4 large Roma tomatoes finely diced
  • ¼ teaspoon Salt
  • ½ small red onion finely chopped
  • 2 Garlic cloves Finely grated
  • teaspoon ground pepper
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 8-10 fresh basil leaves julienne

Chicken bruschetta

  • 4 oz. mozzarella cheese thinly sliced ​​(we used the fresh block-shaped variety)
  • Balsamic reduction to prove

instructions

  • Prepare the chicken marinade. Put all the ingredients for the marinade in a jar. Cover the jar and shake until all the ingredients are combined.

  • Place the chicken breasts in a gallon-sized Ziploc bag or casserole dish and pour the marinade over the chicken. Make sure the chicken is completely covered in the marinade. Seal the bag and place the chicken in the fridge for at least 30 minutes or even overnight (the longer the better).

  • While the chicken is marinating, prepare the bruschetta topping. Place the diced tomatoes in a colander and sprinkle with ¼ teaspoon salt. Mix the two ingredients together. Place the colander over a large bowl and let the tomatoes sit for 10 minutes to allow excess liquid to drain from the tomatoes. Discard excess liquid and place the tomatoes in a large mixing bowl.

  • Add the red onion, garlic, pepper, olive oil, balsamic vinegar and basil to the bowl with the tomatoes and toss to combine. Set aside for later.

  • Preheat the grill to 375°F.

  • Remove the chicken from the refrigerator and remove the chicken breasts from the marinade. Drain excess marinade from chicken breasts. Don’t throw away the marinade.

  • Place chicken breasts over direct heat for 4 minutes, brush each chicken breast with excess marinade, then flip chicken breasts and grill over direct heat for an additional 4 minutes.

  • Place the chicken breasts over indirect heat and grill for an additional 10 minutes.

  • When the chicken is almost fully cooked (about 155°F – 160°F), place thin slices of mozzarella cheese on each chicken breast. Once the chicken has reached 165F and the mozzarella cheese has melted, remove the chicken from the grill and let rest 5 minutes.

  • Serve the chicken breasts with a generous amount of bruschetta and a drizzle of balsamic reduction.
