Ingredients (Makes about 12 muffins)

  • ½ teaspoon baking soda – creates a light texture

  • ½ cup add-ins (chocolate chips, blueberries, nuts, or dried fruit) – optional for extra texture and flavor

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners or grease it lightly.
  2. Mix wet ingredients: In a large bowl, whisk together the Greek yogurt, eggs, honey (or maple syrup), and vanilla extract until smooth.
  3. Combine dry ingredients: In a separate bowl, whisk together the oat flour, protein powder, baking powder, baking soda, cinnamon, and salt.
  4. Mix everything together: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix. Fold in your add-ins if using.
  5. Fill the muffin cups: Spoon the batter evenly into the muffin tin, filling each about ¾ full.
  6. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
