Tasty and healthy, my god Greek quesadillas are quick to prepare and only have six ingredients! It’s a tasty twist on the traditional quesadilla that everyone will love.

We all have those days when we don’t want to cook dinner. Those days when working in the kitchen seems like a nightmare and you just want to settle down on the couch with a good glass of wine.
I recently had one of those days and came up with this Greek Quesadilla recipe. Mainly because all the ingredients happened to be in my fridge. But either way, this recipe requires little prep and is ready in minutes.
If you love Greek food, then this is the perfect dinner answer you didn’t even know you needed. Hummus, check! Artichoke hearts, check! Feta, check! There’s nothing like these quintessentially Greek ingredients, layered in a tortilla and cooked to perfection.

WHAT INGREDIENTS DO I NEED?
- Tortillas (your favorite kind)
- 6-ounce jar of artichoke hearts
- 1 cup baby spinach
- ½ red pepper
- 1 cup hummus (homemade or store-bought)
- Desired amount of feta

HOW DO I MAKE GREEK QUESADILLAS?
Finely chop 170 g artichoke hearts, 1 cup baby spinach and ½ red pepper. In a large skillet, sauté the chopped vegetables in 1 tablespoon olive oil until slightly tender.

Once your veggies are ready, you can start preparing the quesadillas. Lay out your favorite type of tortilla and spread a small amount of hummus on one side (A store-bought version is fine, or you can try my easy hummus recipe.)

Next add a small amount of the sautéed veggies and top with feta cheese. Top with another tortilla and place on a large skillet or griddle. Fry for about 2-4 minutes on each side, or until the tortilla starts to brown. Remove from the grill and let cool. (You should be able to make about 3-4 quesadillas, depending on the size of your tortillas and how much you stuff into each tortilla.)

WHAT DO YOU SERVE WITH GREEK QUESADILLAS?
I often make a Greek yogurt dip that I serve with the quesadillas. It’s cool, fresh, and the perfect accompaniment to this meal. In a small bowl, combine 1 cup Greek yogurt, ¼ cup fresh parsley, 1 tablespoon lemon juice, and a pinch of salt/pepper. Stir well and enjoy!

- Top with additional tortilla and place on a large skillet or griddle.
- Fry for about 2-4 minutes on each side, or until the tortilla starts to brown.
- Remove from the grill and let cool. You should be able to make about 3-4 quesadillas depending on the size of your tortillas.
