How to roast the chicken
-
Season the chicken thighs on both sides with the spices: smoked paprika, dried basil, dried oregano, fresh thyme, red pepper flakes, salt and pepper.
-
Heat an empty, large, high-sided, heavy-bottomed skillet (such as stainless steel or cast iron) over medium-high heat for 3 minutes. This can cause the pan to heat up.
-
Add 2 tablespoons of olive oil (or oil from the jar of sun-dried tomatoes) to the pan. Add seasoned chicken thighs. Cook the chicken on one side over medium-high heat for 5 minutes, without stirring. This allows the chicken to sear.
-
Flip the chicken thighs, reduce the heat to low-medium, add the chopped sun-dried tomatoes and cook for an additional 5 minutes or more, until cooked through. The meat thermometer should read 74°C at the thickest part of the chicken. Remove from stove. Remove the chicken from the pan and leave the sundried tomatoes in the pan.
Add vegetables
-
Add the halved cherry tomatoes, sliced Kalamata olives, and sliced green olives to the pan with the sun-dried tomatoes. Add half of the lemon juice. Stir and gently reheat over low heat.
Make Feta Mixture
-
In a medium bowl, mix diced or crumbled feta cheese with olive oil, chopped fresh basil, dried oregano, fresh thyme, and remaining freshly squeezed lemon juice.

What kind of chicken to use?
- Skinless and boneless chicken thighs are what I used. They are juicy and tender and are usually forgiving of cooking.
- Skinless and boneless chicken breast are your next best choice. They tend to dry out faster, so watch your cooking times closely and make sure the chicken cooks through quickly without drying out.
- chicken keeper are also good choices for this recipe. Be careful to avoid overcooking as chicken tenders cook quickly.
When is the chicken ready?
Use a meat thermometer. The chicken is done when the juices run clear and the meat thermometer should read 165°F (74°C) at the thickest part of the chicken.
