Greek Air Fryer Chicken – Nicky’s Kitchen Sanctuary

Bite-sized pieces of chicken marinated in a blend of Greek herbs, garlic and lemon juice, then air fried until golden and juicy.
I love stuffing this delicious chicken in flatbreads and tossed with lettuce, tomato, whipped feta And marinated red onion.

One of my favorite ways to use my air fryer is to air fry chicken. Whether hot air fryer chicken wing, chicken legs, whole chicken Whether chicken pieces or chicken pieces, the chicken is always golden brown and still remains juicy.

This chicken cooks quickly (about 13 minutes) and is packed with flavor.

  • Chicken breast pieces (can be substituted with chicken thighs if needed)
  • Neutral oil – I like avocado oil
  • Salt, pepper, oregano, dill, garlic and lemon for lots of flavor

👩‍🍳PRO TIP Keep an eye on the chicken as it cooks. Check 2 or 3 times during cooking and shake the air fryer basket to ensure the chicken is cooked evenly and is browned all over.

🍽️ What to serve it with

My favorite way to serve this chicken is on reheated flatbreads or pita breads with lettuce, tomatoes and a drizzle of oil.

INSTRUCTIONS

  • Place the chopped chicken in a bowl or ziplock bag.

    3 chicken breasts

  • Add oil, garlic, dill, oregano, pepper, lemon zest and juice.

    2 tablespoons oil, 2 cloves of garlic, ½ tsp dried dill, 1 tsp dried oregano, ¼ tsp ground black pepper, zest and juice of one lemon

  • Stir to evenly distribute the marinade.

  • Marinate for 20-30 minutes (no more than 2 hours or the lemon juice will break down the fibers in the chicken too much and it will become a bit mushy).

  • Just before you are ready to cook, sprinkle over the salt and stir.

    ½ tsp table salt

  • Place in the air fryer basket and cook at 200°C/400°F for 13-15 minutes until cooked through. Shake halfway through cooking.

  • After cooking, stack in preheated flatbreads and top with your favorite topping. I love adding lettuce, tomatoes, marinated onions, whipped feta and a drizzle of olive oil.

You can make this chicken ahead of time, although I think it tastes best freshly made. If the chicken is boiled and then reheated, it tends to be a little drier.
However, you can do it Marinate the chicken beforehand – then cover and store in the fridge.

  • Finally, marinate the chicken 2 hours ahead

OR

  • Leave out the lemon zest, juice and salt and marinate the night before. Stir together the lemon zest, juice, and salt about 10 minutes before cooking

This chicken tastes great when served cold as part of a salad or wrap the next day.
Just quickly chill the cooked chicken, cover and refrigerate until the next day.
Ingredient swaps/supplements

  • Swap out the whipped feta for crumbled feta cheese. Tzatziki sauce or Greek yogurt mixed with some garlic powder.
  • Swap out the flatbreads for flatbreads or tortilla wraps.
  • Add chopped peppers, olives and/or chopped cucumber

Don’t have an air fryer?

  • Bake Bake the chicken pieces in the oven on a baking tray lined with baking paper at 190 °C (fan oven) for approx. 18-22 minutes (make sure to spread them out). The chicken should no longer be pink in the center as it cooks. If you have a meat thermometer, the internal temperature of the chicken should be 75°C/165°F
  • roast meat In a large skillet, fry the chicken pieces in 2 tablespoons oil over medium-high heat, stirring occasionally, until chicken is tender, about 12-15 minutes.
  • grilling or grill (roast) Roast the chicken for 10-15 minutes, turning once, until the chicken is done. You can make chicken skewers by threading the chicken pieces onto metal skewers to make it easier to turn the chicken if needed.
