Ingredients:
3 boneless, skinless chicken breasts, cut into bite-sized cubes
1/2 cup crushed peanuts
2 packages ramen noodles, cook and set aside *keep warm
5 ounces fresh spinach
1 sweet bell pepper, diced
1 small onion, diced
Olive oil for pan
2-3 spring onions, diced for sprinkling
Salt & pepper, to taste

Gochujang sauce:
• 1/4 cup plus 2 tablespoons soy sauce
• 1/4 cup gochujang sauce
• 1/4 cup tomato paste
• 1/4 cup peanut butter
• 1/4 cup of water
• 2-4 tablespoons of brown sugar
• 2 tablespoons sesame oil
• 2 garlic cloves, chopped
• 1/2-1 cup water to thin the sauce (do not add to the sauce immediately)
directions:
- Prepare the sauce on top and set aside.
- Prepare the pasta of your choice according to the package and keep warm.
- In a large pan add some olive oil and sauté the chicken; sauté over high heat along with the peppers and onions.
- Add the sauce and spinach once the chicken is cooked. Add the pasta and toss to coat, add 1/2-1 cup water to thin the sauce to your liking.
- Serve with crushed peanuts and spring onions* and other toppings of your choice
