Gnocchi soup with bacon and cheese – Leite’s Culinaria

This soup with gnocchi is a heaping bowl of comfort food. I made my own gnocchi the day before and since you can make that for this soup, it’s a nice process to incorporate into an otherwise easy combination. It also saves money!

I didn’t have enough white cheddar but had a 10 month old smoked gouda in my fridge that tasted great. In my opinion, this soup could do with more cheese, probably a cup of cheddar or gouda like in my case, and more as a topping.

Since I didn’t have kale, I added peas, spinach, and corn. Had I had scallions or broccoli on hand I would have definitely added them.

This soup made my home smell wonderful, and even though it’s a blistering 30 degrees outside today, I’m grateful to have air conditioning to cool me down. Along with a candle and a bowl of this soup, I fast-forwarded October and had a lazy Sunday as a result.
