WHAT INGREDIENTS DO I NEED?
- 1 packet of yeast
- 3 tablespoons of sugar
- 1 ½ cups milk
- 3 cups gluten free flour
- ½ teaspoon salt
- 4 tablespoons butter – divided
- 2 eggs
- â…“ cup raisins
- ¼ cup brown sugar
- 3 teaspoons of cinnamon

HOW DO I MAKE GLUTEN FREE CINNAMON RAISIN BREAD?
Start by heating your milk in the microwave for 1 minute. Take out the yeast and sugar and stir in. Let sit for about 10 minutes or until active and frothy.

In a large bowl, whisk together the flour, salt, and raisins. Add the yeast liquid along with 3 tablespoons melted butter and 2 eggs. Once the ingredients are combined, cover and let rise in a warm place for 1-2 hours.
While the dough is rising, whisk together the brown sugar and cinnamon. Set aside for now.

Remove the dough from the bowl and place it on a non-stick mat or parchment paper. Shape the dough into the same length as the loaf pan you will be using. Brush with 1 tablespoon melted butter and sprinkle with the cinnamon-sugar mixture, reserving some to top the bread.
Gently roll out the dough so the cinnamon mixture is in the center of the loaf. Place the batter in your greased loaf pan and sprinkle with additional cinnamon sugar.
**Note that gluten-free dough is very delicate. Try to be as gentle as possible. I chose to pick up the parchment paper and dump the batter straight into the loaf pan rather than trying to pick it up and transfer it. It may not be pretty, but when baked it looks and tastes delicious!

Bake the bread at 350 degrees F for about 40-45 minutes. When finished cooking, remove from the oven and allow the bread to cool completely in the pan before removing.

This addictive bread is perfect for breakfast, brunch, dessert or a snack. In other words, it’s delicious.
