Healthy Curry Cauliflower Casserole - a perfect gluten free casserole recipe with creamy sauce and lots of spices

While working on my second book, I went through a period of freelance recipe development for Food & Wine Magazine. They were just beginning to build their online recipe database and my assignments usually fell into blocks of around 10 recipes that needed to be completed in a short amount of time.

I felt like a contestant on a cooking show, even though I was never allowed to leave my kitchen and no one else was there to witness my trials and tribulations with rice and beans. Or to eat them all, batch after endless batch.

There was a whole week where I only made gluten-free cakes and another with ten variations of Pad Thai. While the latter is definitely one of my favorite foods, after eating it for breakfast, lunch, and dinner, I was ready to reconsider my love affair.

Because of the variety, I was happiest during casserole week. I got to experiment with baked shrimp casserole, healthy creamed spinach, potato gratins, and vegetarian casserole recipes like this healthy cauliflower casserole.

Like any good dump-and-rir recipe, this curried cauliflower casserole requires only a few ingredients that are mixed together and made into a casserole dish. Unsweetened full-fat yogurt makes it rich and creamy, yet light and healthy compared to regular sour cream. It also fuses with Indian-inspired madras curry powder and anti-inflammatory turmeric. Chives add a touch of sparkle to the cauliflower casserole, while the golden raisins add sweetness to the mild curry sauce.

If you don’t like any of these ingredients, cauliflower casserole is easy to adapt to a variety of dietary restrictions (but not you, low-FODMAP folks).

Can You Make This Cauliflower Casserole Keto?

Naturally low in carbs, cauliflower is an excellent option for keto casseroles replacing your favorite potatoes. To make this a keto cauliflower casserole, simply omit the raisins and breadcrumbs. Everything else is fair game.

To make this vegetarian casserole dairy-free, simply use a plant-based yogurt.

The cauliflower casserole is naturally gluten-free, provided you use gluten-free breadcrumbs.
