How about a delicious almond cake with super healthy and wholesome ingredients? Our simple recipe is gluten free, sugar free and vegan, perfect for anyone who can enjoy it without worry. Let’s jump right in!
We made this fluffy cake using a homemade one gluten free flour mix, ripe bananas and vegetable oil. We used almond milk, almond flour and almond essence to give the cake a wonderfully nutty flavor. And for a crunchy finish, we topped it with flaked almonds – a real treat!
Our gluten-free blend is made from rice flour, almond flour and starch. We chose rice flour to add volume, then paired it with almond flour for added flavor and richness. Finally, we used starch to bind the ingredients, add structure and make the cake spongy.
In addition to starch, we also used flaxseed so that the gluten-free mixture holds together even better. Thanks to their high fiber content, these tiny seeds are able to absorb the liquids and form a dense gel, similar to egg whites. The “Flax Egg” works as such a wonderful egg substitute in eggless cakes that we use it all the time.
What makes this almond cake even healthier and more digestible is that we used vegetable oil instead of butter and replaced refined sugar with mashed bananas. Using this fruit when it is very ripe will add flavor to the cake naturally sweet without adding additional sugar.
