What’s wrong with me? French fries are my arch-nemesis. Although I love french fries, I don’t eat them because of the oil they fry and other ingredients added to restaurant french fries. Air-fried steak fries, on the other hand, are incredibly easy to make, oil-free. So after many failed attempts at making this air-fried steak fry recipe, I found the secret.

Despite many failed attempts to use my air-fryer, I couldn’t get the french fries as crispy on the outside as I would have liked. Since the perfect steak fries are crispy on the outside and soft on the inside, I was determined to make oil-free french fries.
And who doesn’t love steak fries with a favorite lentil, grilled mushroom or tofu burger? My kids love their carrot dogs with corny chili sauce.
How to cut potatoes

First, always cut the potatoes evenly. One way to make perfect cuts is to use an apple cutter, Which makes perfect sized wedges.
How to cook potatoes

Next, boil the potatoes for 6 minutes to retain the spices. Unlike air-fryer cookbooks, which recommend soaking potatoes for 30 minutes before cooking, boiling for 6 minutes is perfect!
Second, steak fries seem to cook more evenly when broiled. So I boil the potatoes and run them under cold water until they are at room temperature.

Then, I put them in a ziplock with garlic powder, onion powder, paprika and salt. Then, shake and bake.
Another bonus to parboiling is that if you plan to marinate your fries with malt vinegar or other flavorings, you can do this ahead of time and store them in the fridge before cooking.
Of course, you don’t need to marinate unless you like your steak fry recipe to have a certain flavor.
