The key to an amazing salad is a delicious homemade dressing. You will love this creamy balsamic vinegar. It consists of a secret ingredient…hummus!

One of the reasons we love this quinoa salad so much is that it keeps for a long time in the fridge. We have a word of advice if you’re planning on making this yourself: wait to add the strawberries and mix them in just before serving.
Store this Strawberry Quinoa Salad in an airtight container in the refrigerator for up to 3 days.

- 1 Cup white quinoa uncooked
- 2 cups Water
- 4 cups raw kale deboned and chopped
- 1 tablespoon olive oil
- 1 pint fresh strawberries cut
- 1 big cucumber pieced
- 1/2 Cup chopped red onion
- 1/2 Cup chopped fresh basil
- 4 oz. Crumbled feta
- Salad Pizzaz Salad Topper Strawberry flavored dried cranberries and honey roasted pecans, walnuts and almonds
instructions

First, prepare quinoa. In a medium saucepan, bring the quinoa and water to a boil. Once boiling, turn down to low and cover. Simmer for 15-20 minutes or until the quinoa is fully cooked. Leave to cool for at least 15 minutes. Option to prepare or chill in the fridge.

Next, prepare the salad dressing. Place all ingredients in a medium-sized bowl and stir. Put aside.

Next, prepare the strawberry quinoa salad. Place kale in a large salad bowl and drizzle with olive oil. Use your hands to massage the kale to make it progressively lighter and easier to digest.

Add the strawberries, cucumber, onion, basil and feta crumble to the salad bowl and toss to combine. Then add the cooled quinoa and mix again. Add the full lettuce pizza pouch and stir again.

Finally, drizzle the dressing over the quinoa salad and toss to ensure everything is completely coated.

Place the salad in the refrigerator to cool and serve cold.
