I love making quick breads, they are usually easy to make and have such an amazing taste. This Lemon Poppy Seed Bread is another bread if you love citrus flavors. The best thing about this orange bread and other quick breads is how easy they freeze! You can bake mini loaves or double the basic recipe and always have bread on hand when guests come or give it as a gift.

  • Unsalted Butter
  • granulated sugar
  • eggs
  • oranges – You will need both the juice of 2-3 oranges and the zest
  • all purpose flour
  • baking powder
  • baking powder
  • Salt

How to make fresh orange bread

  1. You want to start with butter at room temperature and cream the butter and sugar together until light and fluffy, about 2 minutes.
  2. Beat in the eggs one at a time until fully incorporated.
  3. Add the orange juice and zest and mix well.
  4. Add flour, baking powder, baking soda and salt; Mix until flour just disappears and is incorporated. The batter will be thick.
  5. Spread in a prepared loaf pan (9×5) and bake for about an hour. You want it to spring back smoothly when touched and a tester to come out clean.
  6. Remove from the oven and let cool for 10 minutes before turning onto a wire rack to cool completely.
  7. When preparing the icing, wait until the bread is fully cooked, then mix together until smooth and ready to drizzle over the bread.

How long does orange bread keep?

It should keep for about a week at room temperature. If you keep it in the fridge, it will last a few days longer. Just make sure it’s wrapped tightly so it doesn’t dry out. It can be frozen for 3-4 months.

Can I omit the orange glaze?

Naturally! If you just want the bread without the icing, feel free to omit it.

How to Freeze Quick Breads

You can freeze it in different ways. You can bake the loaf, let it cool completely, and then wrap it in cling film and place in the freezer for 3-4 months. Ideally, you apply the glaze directly to serving. But the glaze freezes fine, it just releases some moisture as it thaws.

You can also freeze individual slices so you can take out and enjoy just one slice at a time. Arrange the slices in a single layer on a baking sheet, then freeze. Once the slices are frozen through, reassemble them into a loaf and store in plastic wrap or an airtight container.
