It pairs perfectly with fresh cilantro and lime juice for a sweet and tangy twist that’s delicious on just about any vegetable patch. It can also be used as a sauce for your bowl recipes, as a marinade for egg whites, or even as a dip for veggies.

I love that this nutrient dense dressing recipe is so versatile and takes just minutes to make. All you need is 6 simple ingredients (plus salt and pepper!) and a blender and you have the best cilantro lime dressing on your table.

Ingredients for the Cilantro Lime Dressing

  • olive oil – Ideally, use extra virgin olive oil
  • lime – You use both the zest and the juice
  • coriander – Cut off the browned ends of the stems, but you can use the stems and leaves in this recipe. The stems contain a lot of aroma and blend well.
  • Garlic – Ideally use fresh garlic that you have minced and not the garlic from the jar.
  • maple syrup – or honey if not vegan
  • jalapeno – for a little kick. Depending on the level of spice, you can keep or remove the seeds.
  • salt and pepper – Add more or less according to taste.

Pro tip: Make it creamy! Add 1/4 cup plain Greek yogurt to your blender to make a creamy cilantro lime dressing.

How to prepare a cilantro lime dressing

The instructions for making this dressing couldn’t be simpler! Just put everything in the blender and blend! If you don’t have a blender, a food processor will do. You can also chop all the ingredients very finely and then mix them together in a mason jar. It won’t be the same consistency, but the flavors will all be there.

How to use it

On a green bed – You can’t go wrong using this dressing on a bed of your favorite veggies. From romaine lettuce to arugula to kale, they’re a great source of fiber and pair perfectly with this dressing.

As a protein marinade – Marinate your chicken, steak, pork or even tofu in this vinaigrette in the fridge for at least 4 hours. This allows all flavors to be better absorbed.

How to Store the Cilantro Lime Dressing

Store your dressing in an airtight container or jar in the refrigerator for up to 1 week. I wouldn’t recommend putting it in the freezer.
