What is bittersweet chocolate? What can I use as a substitute?

Bittersweet chocolate is a sweetened artificial dark chocolate with no milk added. It has the highest cocoa content (usually around 70%) without actually being a true dark chocolate. The taste of bittersweet chocolate is a deep, slightly sweet, intense chocolate flavor with a dry or crumbly texture.

If you don’t have bittersweet chocolate, Dark chocolate can be used and has a similar taste. Substitute an equal amount of bittersweet chocolate for semi-sweet.

Pro tip: Another alternative is to make your own dark chocolate. Take a tablespoon of unsweetened cocoa powder, a tablespoon of sugar, and two teaspoons of butter in your recipe for every ounce of bittersweet chocolate you substitute. The results won’t be exactly the same as the original, but in a pinch they’ll be pretty close.

If you plan to bake this cake ahead of time, I recommend baking the cake, letting it cool, then covering and storing it at room temperature. I would wait until just before serving to frost the cake. When stored properly, this cake will stay fresh for two to four days.

Should flourless cake be refrigerated?

Not necessarily! Unless you’ve topped it with whipped cream or a cream cheese frosting (or anything else dairy-related), you can store it at room temperature, well covered. Usually the cake will dry out faster if it is kept in the fridge.

Can I freeze a flourless cake?

Yes! These cakes freeze very well. Be sure to wrap it in plastic wrap or place it in a freezer-safe, airtight container to avoid freezer burn. The cake should stay fresh in the freezer for up to 3 months. If you want to use it, let it thaw in the fridge overnight.
