Simple and delicious cookies that are nutritious enough for breakfast or a quick snack.
cookies for breakfast? Um, YES PLEASE! It’s like a little kid’s dream come true…or an adult’s dream, if I think about it.
I’ve been making these recipes for years! In fact, this was one of the very first recipes I ever posted on The Healthy Home Cook. I decided to update the pictures and remind everyone how AMAZING these cookies are!
These flourless breakfast cookies are perfectly chewy, filled with bananas, oatmeal and a touch of peanut butter. A perfectly healthy and portable breakfast option for a family that’s always on the go in the morning.
WHAT INGREDIENTS DO I NEED FOR NO FLOUR BREAKFAST COOKIES?
- 1 cup oats – (I used rolled oats and rolled oats; both work great.)
- 2 ripe bananas
- 1/4 cup natural peanut butter (or my almond butter recipe)
- 1/4 cup chopped nuts – (pecans or almonds)
- 2 tbsp honey – (swap for agave nectar or maple syrup if desired)
- 1 teaspoon Baking powder
- 1/2 tsp vanilla
- 1/4 tsp cinnamon
- pinch of salt
Easy to make in one bowl and packed with nutritious ingredients, how could you not love these cookies?!
HOW DO I MAKE NO FLOUR BREAKFAST COOKIES?
STEP 1: Preheat oven to 350 degrees.
STEP 2: Mash bananas with a fork or potato masher until smooth.
STEP 3: Add remaining ingredients. Mix well.
STEP 4: Place small heaps of the mixture onto a baking sheet lined with parchment paper or a silicone mat. Bake for about 12-15 minutes.
Made with wholesome ingredients, these flourless breakfast cookies will start your day with a tasty boost of energy. No flour, oil, butter or refined sugar. They will please even the pickiest of eaters.
