There are many variations of pasta fagioli. The traditional tomato base, either thick or mushy, combines some sort of beans and pasta with optional meat for flavor. We love that this recipe is totally adaptable! Pasta e Fagioli means “noodles and beans”.

This version of Pasta Fagioli is made with ground turkey for extra protein and some smoked paprika for a deep flavor. Both fresh and dried herbs combine with tomatoes to create the flavorful broth.

Cannellini beans and ditalini pasta are completely interchangeable with what you have on hand. Use whatever meat you prefer. Some traditions swear by pancetta. Others use bacon or ground beef. Feel free to add a herbal option.

Notes on ingredients

protein– we use ground turkey here. Swap out for beef, lamb, Italian sausage, bacon, or vegetarian alternatives.

beans– Cannellini or chickpeas, kidney beans, kidney beans or whatever is your favorite or a combination of two or three different kinds.

pasta– Use small pasta (gluten-free if needed) such as ditalini, clams, elbow or orzo.

How to make Pasta Fagioli

Chopped onion, carrot and celery.

Step one- When chopping your veggies, keep the size of the pasta in mind and chop roughly the same size. Keeping the sizes small will give you a well-rounded bite with a spoon!

Sauté onions, garlic and ground turkey in a saucepan.

step two- In a stockpot, sauté olive oil and onions until translucent and soft, about 5 minutes.

Add garlic, ground turkey, smoked paprika, salt and pepper. Fry for about 3 minutes.

step three– Stir in the celery, carrots and rosemary, basil, thyme and marjoram for about 1 minute. Add broth, simmer tomatoes and beans for 20 minutes.

step four- Add pasta, cook until tender, about 8-12 minutes. Add red wine vinegar.

step five- Season to taste with salt, pepper and vinegar. Add red pepper flakes or Aleppo for spicy goodness.

Sprinkle with fresh parsley and Parmesan, if you like.

A hearty and totally adaptable delicious soup, Pasta Fagioli is a traditional Italian soup with beans, meat and noodles in a spicy herb tomato broth.


  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 4 Garlic cloves, roughly chopped
  • 12 ounces Ground turkey or beef, or vegetarian substitute
  • 1 teaspoon Salt
  • 1/2 teaspoon pepper
  • 1 teaspoon smoked paprika
  • 2 Celery sticks, finely chopped
  • 1 Cup carrots, chopped small
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon each dried basil, thyme and marjoram
  • 4 cups chicken soup
  • 15 oz Tomatoes, whole or chopped
  • 15 ounces (1 1/2 cups) Northern cannellini beans, undrained
  • 1 tablespoon red wine vinegar
  • 1 accumulate Cupabout 4 ounces ditalini pasta, uncooked or other small pasta

Sprinkle with fresh parsley and Parmesan, if you like.
