Elf Spaghetti Pancakes – My picky eater

Buddy The Elf breakfast spaghetti, but let’s actually make it edible! The kids will love this twist for a fun Christmas breakfast.

If you’ve seen the movie Elf, you know that infamous scene where Buddy eats a plate of spaghetti for breakfast that’s topped with lots of candy, marshmallows, sprinkles, and syrup.

Kids might like the idea, but let’s face it, it’s not exactly edible!

So I tried to make my own version. Instead of pasta, I made spaghetti pancakes topped with Greek yogurt and berries. Much better for breakfast!

Ingredients are placed in a glass measuring cup.  The jug sits on a scale.

Start with a simple pancake mix made with milk, egg, and flour. Mix in a pitcher until smooth.

Grease a large frying pan with a little butter or oil, then pour the pancake mixture in a zigzag pattern over the pan.

Go back and fill in any gaps with a small drop of the mixture. This will help get those long spaghetti-like strands.

Pancake mix is ​​poured into a frying pan.

Fry for 1-2 minutes, then turn and fry for another minute.

Don’t worry if your spaghetti pancakes fall apart when you flip them.

Repeat with the rest of the mixture, then stack them all on a plate.

Elf spaghetti is served on a celebratory plate, waiting for toppings to be added.

Garnish with Greek yogurt and berries or any other toppings your kids like.
