This Edamame Salad with Honey Vinaigrette is a quick and easy side to make, perfect for any occasion.

There are very few recipes faster, easier, and more filling than a simple bean salad!
During the warmer months, I thrive on simple recipes like this edamame salad. Not only is it budget-friendly, it’s packed with nutritious veggies, takes less than 15 minutes to make and is perfect for preparing meals for the week ahead.

WHAT INGREDIENTS DO I NEED?
- 16 ounces frozen edamame – shelled
- 10 ounces frozen corn
- ½ bell pepper (preferred color)
- 5 spring onions
- ½ bunch of fresh coriander
- ¼ cup avocado oil (or olive oil)
- 3 tablespoons red wine vinegar
- 4 teaspoons of honey
- ½ teaspoon salt & pepper
OPTIONAL ADDITIONS:
Depending on what you have on hand and what you like, these would be delicious additions to your edamame salad:
- Diced avocados
- arugula
- Crumbled feta or queso fresco
- Shredded carrots
- slivers of almonds

HOW DO I MAKE EDAMAME SALAD?
STEP 1: Microwave frozen corn and edamame according to package directions.
STEP 2: Combine corn and edamame in a large bowl. Add chopped peppers, spring onions and coriander.

STEP 3: In a small bowl, whisk together the oil, vinegar, honey, salt, and pepper.
STEP 4: Pour the vinaigrette over your salad and mix well. Store in an airtight container in the refrigerator until ready to serve.
