Last weekend, I was craving something savory for breakfast and decided to whip up a batch of this simple vegan tofu scramble. It had been many years since I made it and I quickly fell in love with it all over again. They are one of my favorite vegan breakfast recipes! Eggs are great and all, but this tofu scramble might be even better! (Bonus, no animals are harmed when making tofu scramble. 🥰)

  • Medium Firm Tofu: When I make scrambled tofu at home, I like to use medium-firm tofu instead of extra-firm tofu because the softer texture is more like regular scrambled eggs. You don’t need to press it – you just crumble it right into the pan.
  • Black Salt (Kala Namak): A little black salt goes a long way. To get that classic egg flavor in our tofu mix, you’ll want to use this secret ingredient. Grab some black salt from Amazon for all your vegan egg recipes.
  • Nutritional yeast and garlic powder: add some savory flavor to these delicious vegan eggs.
  • Turmeric Powder: add the color yellow to these tofu eggs to make them look more like real scrambled eggs. You can skip it, but your eggs will be white.

Second step: Add turmeric, black salt, garlic powder and nutritional yeast. Stir-fry until the tofu is heated through and the moisture in the tofu has cooked out. Taste and add more salt if needed and a few cracks of black pepper.

  • Add the tofu to a large bowl and use a fork or a potato masher to crumble the tofu into small pieces.

  • Add olive oil to a non-stick pan over low heat.

  • Add tofu, nutritional yeast, turmeric and garlic. Toss to coat tofu with seasonings. Cook over low to medium-low heat until the tofu liquid has cooked off and the tofu is hot.

  • Season with salt and pepper. Taste and add more salt if needed.
